CRANBERRY LIQUEUR (LIGHT)
I have made this for Christmas and also for Summer parties - it is delicious! It keeps in the fridge for up to a year (as I am writing this, I am having a sip of my liqueur I prepared for Easter - and it is still as good (if not better)!! I got this recipe from a Cooking light magazine.

Steps:
- Combine sugar and water in a medium saucepan; cook over medium heat 5 minutes or until sugar dissolves, stirring constantly. Remove from heat, and cool completely.
- Place cranberries in a food processor; process 2 minutes or until finely chopped. Combine sugar mixture and cranberries in a large bowl; stir in vodka.
- Pour the vodka mixture into clean jars; secure with lids. Let stand 3 weeks in a cool, dark place, shaking every other day.
- Strain the cranberry mixture through a cheesecloth-lined sieve into a bowl, and discard solids. Carefully pour liqueur into clean bottles or jars.
- Note: Liqueur can be stored refrigerated or at room temperature for up to a year.
CRANBERRY LIQUEUR
Great liqueur for Christmas drinking or Christmas gifts. Cranberry solids are great for making cranberry loafs (with a kick!) Very good served with soda water and orange juice.

- Combine cranberries, sugar, gin, and vanilla extract in a large sterilized jar with a tight-fitting lid. Let stand at room temperature for 6 weeks, shaking at least once a week. Pour mixture through a sieve and discard solids. Store in an airtight container for up to 2 months.

HOMEMADE CRANBERRY LIQUEUR

Steps:
- Pulse cranberries in a food processor just until roughly chopped; transfer to a clean glass container. Add vodka, simple syrup, lemon peel, orange peel, cinnamon stick, and allspice to cranberries; stir until well mixed. Seal container with a lid and store in a cool dark area, 3 to 5 days, stirring several times a day. Strain through a fine mesh strainer into a glass bottle and refrigerate.

- Boil the cranberries, sugar and 1/2 cup water until the cranberries are soft and start to pop, 5 to 10 minutes. Puree in a food processor and pour into a jar. Add the vodka and cinnamon sticks and refrigerate for at least 3 days and up to several weeks. Strain through a fine sieve before serving.

I use either Grand Marnier or Cointreu in this recipe. The additions of liqueur and orange zest make this cranberry sauce a holiday favorite at our house.

Steps:
- Combine sugar and water in a medium saucepan.
- Bring to a boil; add cranberries, return to a boil.
- Reduce heat and boil gently for 10 minutes, stirring occasionally.
- Remove from heat. Add orange zest and Cointreau (or Grand Marnier) and stir.
- Let cool at room temperature.
- Refrigerate until cold, or serve at room temperature.

CRANBERRY LIQUEUR
This is a beautiful liqueur. Make extra and give as a gift in a cut-glass or blown glass bottle. Use blueberries or raspberries to vary the flavors.

Steps:
- Combine the sugar and water in a large pan, and bring to a boil.
- Simmer 5 minutes and then stir in the berries and grated rinds.
- Take off the heat; cool.
- Sterilize a 1 quart jar and pour berry/sugar mix into it.
- Add vodka and stir.
- Cover with lid.
- Store in a cool dark place for one month, shaking every other day.
- At the end of the month, strain the berries out.
- Sterilize another jar, and pour the liquid into it.
- Cover, put back in the dark, and let sit another four weeks.

CRANBERRY LIQUEUR
I always associate autumn with cranberries. Here is an elegant liqueur that's really easy to make (and a treat to receive as a Christmas or hostess gift). If giving as a gift, be sure to allow enough time (in days) for the fruit to fully infuse the liquor. Cooking time is actually infusion time. UPDATE: After the liqueur is made, try using it to make Rita L's cocktail A Jolly Christmas Special Cosmo or Red Hot Lovers Cosmo (recipe #109007), or if you give the liqueur as a gift, you might want to give the recipient a copy of Rita's recipe to go with it!)

Steps:
- Combine cranberries with 2 cups sugar.
- Add water and boil 4-5 minutes until skins start to pop.
- Remove from heat and cool.
- Put in a mixing jar, add vodka and shake vigorously.
- Cover and leave to infuse at least 7 days, shaking or stirring occasionally.
- Pour thru a coarse strainer and discard berries.
- Let rest 3-4 days.
- Without shaking the jar, decant only the clear liquor into another jar, leaving white residue in the original jar.
- The white residue can be put thru a paper strainer (I use an unbleached coffee filter) until liquid is clear; add the strained liquor to the already decanted liqueur.
- Combine liqueur with 2 more cups of sugar and shake vigorously until sugar is absorbed.
- Let clear overnight and bottle.

- SIMPLE SYRUP - In the 3-quart pot, dissolve the sugar in the water over medium heat, stirring as it cooks. Don't allow it to boil, just cook long enough to dissolve, then remove from heat and allow to cool. You can make this ahead and keep in the refrigerator for up to a week.
- Rinse the cranberries well and pick through them to remove any bad berries. Puree the berries in the food processor, adding a cup or so of the simple syrup to help smooth the puree. Process in batches if necessary. Transfer the pureed berries and the rest of the simple syrup to the large mixing bowl and stir. Add the alcohol and stir.
- Cut each vanilla bean in half, then split the halves lengthwise. Place each bean half in the bottom of a mason jar, then pour in the cranberry mixture. Seal each jar and store in a cool dark place (cellar) or in the refrigerator for 2 to 3 weeks.
- Strain the cranberry mixture through a fine mesh sieve. Check the strained liquid to make sure it's free of floating particles, and strain again if necessary. Pour into gift bottles. The liqueur will keep in the refrigerator for up to 1 year.
