1 navel orange
1 (12 ounce) package fresh cranberries
½ cup white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  • Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  • Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.

1 unpeeled navel orange
2 cups fresh or frozen cranberries
1 unpeeled medium red apple
1 package (3 ounces) raspberry gelatin
1-1/3 cups boiling water
1 can (20 ounces) crushed pineapple, undrained
1/2 cup chopped walnuts

Steps:

  • Slice the orange into eighths; finely chop in a food processor. Add cranberries and process until chopped. Slice apple into eighths; add to orange mixture and process until chopped. In a large bowl, dissolve gelatin in boiling water; stir in pineapple and orange mixture. Chill for at least 4 hours. Just before serving, stir in nuts.

1/2 cup sugar
1-1/2 cups boiling water
1 pkg. (6 oz.) JELL-O Cranberry Flavor Gelatin, or any red flavor
1/2 tsp. ground cinnamon
1-1/2 cups cold water
1 can (11 oz.) mandarin oranges, drained

Steps:

  • Process cranberries in food processor until finely chopped; spoon into medium bowl. Add sugar; mix well.
  • Add boiling water to combined dry gelatin mix and cinnamon in large bowl; stir 2 min. until gelatin is completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until thickened.
  • Stir oranges and cranberry mixture into gelatin mixture. Spoon into 6-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold just before serving.

1 large orange (unpeeled (~2 cups with rind ON))
½ Granny Smith apple (cored and sliced (~1 cup))
12 ounces fresh cranberries (rinsed, about 3 cups)
½ cup granulated white sugar
¼ cup dark brown sugar
1 teaspoon lime zest (~ ½ a lime)

Steps:

  • Use a knife to cut the orange into 8 even pieces, keeping the peel on.
  • Place the orange pieces and the Granny Smith apple slices into a food processor or blender. Pulse 4 to 5 times to begin the chopping process.
  • Add the fresh cranberries, granulated white sugar, dark brown sugar, and lime zest into the food processor.
  • Pulse the mixture about 8 to10 times until it looks finely chopped. Do not over process the mixture. You don't want a puree.
  • Scoop into a large dish or bowl that can handle about 4 cups of relish. Cover and refrigerate for an hour to overnight to allow the flavors to meld.
  • Best when served cold.

2 whole oranges
1 c sugar
2 tsp lemon juice
2 tsp fresh ginger, julienned
12 oz fresh cranberries
1/2 tsp freshly ground white pepper

Steps:

  • 1. Peel 1 orange and cut the zest (orange part only) into a very fine julienne, as thin as possible; set aside. Squeeze both oranges for juice; set aside. Combine sugar and lemon juice in a small sauté pan. Heat up slowly and continue cooking until the sugar begins to caramelize. If necessary, wash down the sides of the pan by brushing with a little water to keep the sugar from burning. When the sugar is caramel colored, add the julienned ginger and orange zest. Cook for about 1 minute, then add the cranberries, orange juice and pepper. Continue to cook on medium-high heat, stirring frequently, for about 5 minutes or until the cranberries are slightly broken but not mushy (frozen cranberries will take about 7 minutes). Remove from the heat and let cool.
