1 boneless rolled pork loin roast (2-1/2 to 3 pounds)
1 can (14 ounces) jellied cranberry sauce
1/2 cup sugar
1/2 cup cranberry juice
1 teaspoon ground mustard
1/4 teaspoon ground cloves
2 tablespoons cornstarch
2 tablespoons cold water
Salt to taste

Steps:

  • Place pork roast in a 5-qt. slow cooker. In a small bowl, mash cranberry sauce; stir in the sugar, cranberry juice, mustard and cloves. Pour over roast. Cover and cook on low for 6-8 hours or until meat is tender. , Remove roast and keep warm. Skim fat from juices. Pour into a 2-cup measuring cup; add water if necessary to measure 2 cups. Pour into a small saucepan. Bring to a boil over medium-high heat. Combine cornstarch and cold water until smooth; stir into pan juices. Bring to a boil. Cook and stir for 2 minutes or until thickened. Season with salt. Serve with sliced pork.

1/4 teaspoon cinnamon
1/8 teaspoon salt
6 tablespoons orange juice
1 (16-ounce) can whole berry cranberry sauce
1 (3 to 5-pound) boneless pork loin

Steps:

  • Preheat oven to 325 degrees F.
  • In a small saucepan, combine cornstarch, cinnamon, and salt. Stir in orange juice and cranberry sauce. Cook over medium heat, stirring, until thickened, and set aside.
  • Place pork in a shallow roasting pan and cover with about half the cranberry mixture. Insert a meat thermometer. Roast 1 to 1 1/2 hours, basting occasionally with the remaining sauce. Meat is done when thermometer reads 160 degrees F. Remove meat from oven and allow to rest 10 minutes before carving.

Salt and ground black pepper
1 16-ounce can whole cranberry sauce
1/2 cup cranberry juice
1/4 cup sugar
1 teaspoon dry mustard
1/4 teaspoon ground cloves
2 tablespoons cornstarch
2 tablespoons cold water
Hot cooked rice pilaf, rice or noodles (optional)

Steps:

  • Season all sides of the tenderloin with the salt and pepper Turn the Ninja Cooking System on to high heat and add 2 tbsp of Olive Oil or vegetable oil. Allow the system to heat up and sear all sides of the tenderloin Combine remaining ingredient except cornstarch and water (that is for thickening sauce when roast is done) Add the roasting rack in and place the tenderloin on top Change the heat setting to oven at 350° Cook for 20-25 minutes Cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours. 2.   • Place pork roast in 3 1/2 to 4-quart slow cooker.
  • In small bowl, combine cranberries, broth, orange peel and 1/4 cup of the cranberry juice cocktail; mix well. Pour over roast.

¼ cup white sugar
½ cup cranberry juice

Steps:

1 head broccoli cut into florets
1 (1-pound) bag baby carrots
1 tablespoon water
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • 1. 8 hours before serving: Place pork in slow-cooker. 2. In a medium bowl, mix cranberry sauce, orange juice, mustard, and cloves together (mashing cranberry sauce). Pour over roast. 3. Cook on low 8 hours, or on HIGH 4 hours. 4. 20 minutes before serving, put a large pot of water on to boil. Add noodles to boiling water, set timer for 10 minutes or according to package directions. 5. Place broccoli, carrots, and water in microwave-safe dish, cover and cook on high 7 minutes. 6. 1 teaspoon salt
1 teaspoon black pepper
8 ounces whole berry cranberry sauce
1 cup apple jelly
1 cup chicken broth
2 garlic cloves, chopped
1 tablespoon creole mustard (or spicy brown mustard)
2 teaspoons dried thyme leaves
2 apples, sliced
1 fresh thyme sprig

Steps:

  • PORK ROAST: Sprinkle salt and pepper evenly on pork roast. Place roast on a rack coated with cooking spray in roasting pan (or in an aluminum foil-lined roasting pan).
  • CRANBERRY GLAZE: Preheat oven to 425°F In a medium saucepan over medium heat, mix together chutney ingredients and bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally. Pour chutney mixture evenly over pork.
  • Bake for 20 minutes, baste the roast, and continue cooking for 20-25 minutes or until a meat thermometer inserted into thickest portion registers 160°F,.

  • Melt butter in heavy large skillet over medium-high heat. Add onions; sauté until golden, about 8 minutes. Add garlic, 1 1/2 teaspoons orange peel, sage, and 1 teaspoon thyme; stir 1 minute. Add broth and cranberry juice; simmer until mixture is reduced to 2 1/2 cups, about 8 minutes. Strain sauce into heavy medium saucepan, pressing on solids with back of spoon.   • Preheat oven to 400°F. Heat remaining 1 tablespoon oil in heavy large ovenproof skillet over high heat. Add pork and cook until brown, turning frequently, about 5 minutes. Transfer skillet to oven and roast pork until instant-read thermometer inserted into thickest part of pork registers 150°F, about 20 minutes. Transfer pork to platter; cover to keep warm. Add cranberry sauce and remaining 1 1/2 teaspoons orange peel to same skillet and bring to simmer, stirring frequently.
