Fresh Cranberry Relish image

This 3-ingredient cranberry relish has been a family favorite for generations! It's sweet and tangy and perfect paired with Thanksgiving turkey or even for topping on chicken or pork

12 ounces fresh cranberries
1 orange (, with the peel ON)
1 cup granulated sugar

Steps:

  • Slice the very edge root ends off of the orange, just until you see the flesh. Leave the rest of the skin ON the orange and slice it into 8 pieces.
  • Place the fresh cranberries, orange slices and sugar in your food processor and process until smooth (or until no large chunks remain).
  • Refrigerate until ready to serve (it tastes best after being in the fridge for at least on hour) or for up to 1 week. Serve over turkey, chicken, pork loin etc.

Brandied cranberry sauce makes a delicious filling for these brown sugar-oat squares. We can almost guarantee they'll become an instant family favorite.

1-1/2 cups quick-cooking oats
1-1/2 cups flour
1 cup firmly packed light brown sugar
1 tsp. baking powder
3/4 cup (1-1/2 sticks) cold butter, softened
1 cup Brandied Cranberry Sauce

Steps:

  • Preheat oven to 350°F. Mix oats, flour, sugar and baking powder in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Press 2/3 of the oat mixture firmly onto bottom of 9-inch square baking dish; top with Brandied Cranberry Sauce. Sprinkle with remaining oat mixture.
  • Bake 30 minutes or until topping is lightly browned. Cool completely on wire rack. Cut into 24 squares to serve.

Real quick and easy to make! I got this recipe from an acquaintance at a boardgame night. The original recipe called for walnuts, but I think pecans are a more complementary flavor. These cranberry bars are delicious, with a delightful balance of sweet and tart. Don't count on leftovers - these moist squares get gobbled right up!

1 1/2 cups flour
1 1/2 cups sugar
1 cup butter, Softened
2 eggs, Beaten
2 cups raw cranberries, left whole
1 cup pecans, Chopped

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9" x 13" Pan.
  • Mix the butter with the sugar, and add the eggs and flour.
  • Stir in the cranberries and pecans.
  • Pour batter into greased pan, spreading out evenly.
  • Bake at 325 degrees for 45 - 50 minutes.
  • Cool. Cut into squares. At Christmas-time, you can add chopped green candied cherries. These also freeze well.

2 ⅓ cups rolled oats
¾ cup all-purpose flour
1 ⅝ cups packed brown sugar
1 cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the oats, flour, brown sugar and butter. Stir until the mixture resembles coarse crumbs. Spread the cranberries into the bottom of one 9x13 inch baking pan. Sprinkle crumb mixture over top.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes. Cool and cut into squares.
