A great Iranian breakfast and a good way to get the kids to eat dairy. My daughter loves honey (that's what she would like to eat every morning) so it's a good way for her to have it other than just with butter and bread.

1/2 cup fresh cream
2 tablespoons honey

Steps:

  • Blend the honey and the cream. Add more or less honey, according to your taste.
  • Serve with flat bread or if available with barbari (Iranian brread).
  • Variations: instead of honey use dates or cocoa powder.

3 egg yolks
2 tablespoons honey
1/2 cup sweet wine, such as marsala (I use Icewine)
1 cup heavy cream
4 -6 fresh apples, use your favourite baking apples
3 tablespoons soft butter
1/4 cup brown sugar

Steps:

  • For sauce:.
  • Beat egg yolks and honey until light and frothy, about 10 minutes.
  • Reduce speed; mix in wine.
  • Transfer mixture to double boiler and stir constantly over moderate heat until custard thickens and feels heavy. It should coat the back of a spoon thickly.
  • BE CAREFUL NOT TO LET THE MIXTURE BOIL!
  • Remove from heat, cool to room temperature; chill to cool completely.
  • Whip cream until it reaches soft peaks, then fold into cold sauce. Keep chilled until ready to serve.
  • To bake apples: Preheat oven to 350°F.
  • Slice top third off each apple, leaving stems intact; remove cores.
  • Push butter into core cavities and rub some onto skins. Place apples in baking dish; sprinkle with sugar, pushing some sugar into cavity of each. Replace tops; sprinkle with remaining sugar.
  • Bake 35-40 minutes until apples are tender. Cool to room temperature; serve with dollop of sauce between apples and tops.

A little different than regular creamed spinach because of the cheese a good way to get my kids to eat spinach

2 (10 ounce) bags fresh spinach, stemmed,washed and drained
2 tablespoons butter
1/3 cup heavy cream
1/2 teaspoon fresh grated nutmeg
fine sea salt
1/4-1/2 freshly grated parmigiano-reggiano cheese

Steps:

  • Put the spinach in a large pot with just the water clinging to its leaves, cover, and cook until wilted, 3 to 4 minutes.
  • Drain well and squeeze dry.
  • In a skillet, melt the butter over medium heat, add the spinach, cream, nutmeg and salt and stir well.
  • Sprinkle on the cheese.
  • I use the full amount of cheese because we like a lot of cheese if you prefer less use less.
  • Turn off the heat, cover the pot and let sit for a few minutes until the cheese melts.
  • Serve immediately.

1 tablespoon butter, softened
1 cup heavy whipping cream
2 cups honey
1 cup sugar

Steps:

  • Grease a 15x10x1-in. pan with butter; place in the refrigerator. In a large deep heavy saucepan, combine cream and honey. Add sugar; cook over medium heat and stir with a wooden spoon until sugar is melted and mixture comes to a boil., Cover pan with a tight-fitting lid and boil for 1 minute. Uncover; cook, without stirring, until a candy thermometer reads 290° (soft-crack stage). Remove from the heat and pour into prepared pan (do not scrape sides of saucepan). Cool for 5 minutes. Using a wooden spoon, bring edges of honey mixture into center of pan. Cool 5-10 minutes longer or until cool enough to handle., Using buttered hands, pull and stretch taffy until ridges form. (Taffy will lose its gloss and become light tan in color.) Pull into ropes about 1/2 in. thick. With a buttered kitchen scissors, cut into 1-in. pieces. Wrap individually in plastic wrap or waxed paper.
