HOT CRAWFISH DIP
Try a taste of New Orleans with this Creole flavored hot crawfish dip - a great seafood appetizer that takes only 30 minutes.

Steps:
- In large saucepan, melt butter over medium heat. Add 1 cup onions and the bell pepper; cook 8 minutes, stirring occasionally, until bell pepper is tender. Stir in crawfish, garlic, pimientos and Creole seasoning; cook 10 minutes, stirring occasionally.
- Reduce heat to low. Add cream cheese; cook and stir until mixture is smooth and bubbly.
- Spoon dip into serving bowl. Garnish with parsley and additional onions. Serve hot with baguette slices.

Add paprika and cayenne pepper, and cook 1 more minute. 2. Place crawfish, cream cheese, Cheddar cheese, and cream in a 6-quart slow cooker. Stir in bell pepper mixture, Creole mustard, Worcestershire sauce, and hot sauce. Cover and cook on HIGH 45 minutes. Reduce heat to WARM. Stir in lemon juice and parsley; serve with crackers or toasted baguette slices

Steps:
- Sauté bell pepper, onions, celery, garlic and crawfish in butter.
- Add cream cheese, lower temperature and cover to let cream cheese melt. Add mayonnaise, salt, pepper, creole seasoning to taste. Simmer approximately 15-20 minutes.
- Add parsley if desired. Serve warm.

This should serve 8 to 10, but I usually double the recipe because it goes quickly. I'm always asked to make this for every gathering. It's a family favorite.

Steps:
- Heat butter in a large pot over medium heat. Stir in green onions, and cook briefly. Add parsley and crawfish, and simmer about 7 minutes, stirring frequently. Stir in flour to coat crawfish.
- In a small bowl, mix together egg yolks and evaporated milk. Stir into crawfish, and reduce heat to medium-low. Gradually add cheese cubes, stirring continuously until the cheese has melted. Season with salt, pepper, and hot pepper sauce. Remove from heat, and bring to room temperature before serving.

- Combine crawfish tails, cream cheese, sour cream, green onions, garlic, mustard, and crab boil seasoning in a large mixing bowl. Mix with an electric hand mixer until the consistency is nice and creamy.
- Place mixture in an oven-safe dish. Sprinkle bread crumbs on top of the mixture.
- Bake in the preheated oven until the top is lightly browned, about 20 minutes.

MARK'S CRAWFISH DIP
DH decided he could "outdo" my crawfish dip for a recent get together we had. After combining 3 different recipes, I'll have to say that he came up with a winner that is a MUCH different recipe from the one I've used for years. Serve this dip with assorted crackers, corn chips or large chunks of toasted french bread.

Steps:
- Melt butter in a large skillet on low heat.
- Add the flour and mix well.
- Add garlic, Kitchen Bouquet, pimentos and mushroom and sauté for 8 minutes.
- Mix in the crawfish tails and cook for 15 minutes, stirring constantly.
- After 15 minutes, add the parsley, green onion and water chestnuts and cook for 10 minutes, stirring frequently.
- Season with Tony's to taste.
- Serve hot.
