250 g ground meat (beef and or pork)
1 egg
5 tablespoons breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon parsley
4 slices bacon (finely chopped)
1/2 teaspoon mustard
4 tablespoons parmesan cheese (grated)
70 g cream cheese
1/8 teaspoon salt
1/8 teaspoon pepper
3 fresh basil leaves (finely chopped)
2 -3 pinches dried Italian seasoning (basil, marjoram, oregano, rosemary, sage, and or thyme)

Steps:

  • Mix the first 9 ingredients together in a bowl to make the meatballs.
  • Separate into 8 equal parts and build flat round patties.
  • Mix the rest of ingredients into a separate bowl to make the filling.
  • Preheat oven to 200°C.
  • Divide the filling onto 4 of the patties. Be careful not to add too much and to place it in the center.
  • Place the remaining 4 patties on top of the filling, being careful not to spill the filling.
  • Add some olive oil to a hot pan and sear the patties for 30 secs on each side.
  • Place in the oven for 15-20 minutes to finish them off.

8 to 10 slices applewood smoked bacon
1 pound ground chuck
1 tablespoon Worcestershire sauce
1 package onion soup mix
1/2 cup panko bread crumbs
1 tablespoon coarse black pepper
1 tablespoon beef stock
8 to 10 bocconcini mozzarella balls
1/4 cup olive oil
1 yellow onion, finely diced
2 tablespoons minced garlic
2 tablespoons freshly chopped basil leaves
2 tablespoons freshly chopped oregano leaves
1 tablespoon coarse ground black pepper
2 (14-ounce) cans crushed tomatoes
2 (14-ounce) cans diced tomatoes in puree
1/2 teaspoon crushed red pepper flakes
1 tablespoon chicken bouillon

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the bacon slices on a sheet pan. Put in the oven and bake until crisp, about 8 to 10 minutes. Remove the bacon from the pan to a cutting board and chop. Set aside.
  • In a large bowl, mix together the beef, Worcestershire, onion soup mix, bread crumbs, black pepper, stock and the chopped bacon.
  • Form portions of the meat around bocconcini to make smooth balls. Arrange the meatballs on a sheet pan with a rack and bake until thoroughly browned, about 10 to 15 minutes.
  • Add the oil to a medium saucepan over medium-high heat. When the oil is hot add the onion, garlic, basil, oregano and pepper and saute for a few minutes. Stir in the crushed and diced tomatoes, red pepper flakes and the bouillon. Lower the heat and simmer for 10 to 15 minutes.
  • Remove the meatballs from the pan to a serving platter and serve with the marinara sauce.

3 tablespoons sliced or finely chopped sage leaves
3 tablespoons extra-virgin olive oil
8 ounces Gorgonzola
1 tablespoon butter
2 fresh bay leaves
1 onion, finely chopped
1 cup chicken stock
1 (15-ounce) can crushed tomatoes
1/2 cup cream

Steps:

  • Preheat oven to 400 degrees F.
  • Place meat in a mixing bowl and season with salt, pepper, add in garlic, eggs, cheese, bread crumbs and sage. Mix meat, roll into 8 large balls and arrange in a baking dish. Coat balls with 2 tablespoons extra-virgin olive oil. Using the end of a wooden spoon, make an indentation half way into each ball and fill the cavity with some Gorgonzola. Bake until golden and cooked through, 15 to 20 minutes.
  • Heat 1 tablespoon extra-virgin olive oil and butter in a sauce pot over medium heat, add bay and onions and season with salt and pepper. Add chicken stock and tomatoes and heat through, stir in cream, reduce heat to medium-low and simmer to thicken slightly 8 to 10 minutes.
  • Ladle sauce into shallow bowls and top with big stuffed meatballs and potatoes alongside, if desired.

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Grease a baking pan.

1 cup ricotta cheese
1/2 cup grated Parmigiano-Reggiano cheese
1 1/2 teaspoons coarse salt
Freshly ground black pepper
3 cups cubed crusty white Italian bread, crusts removed
1 pound ground veal
1 pound ground beef
1 pound ground pork
1 large egg
1/2 onion, chopped
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh basil
1 1/2 cups grated Parmigiano-Reggiano cheese
Pinch of oregano
Coarse salt
2 cups Basic Tomato Sauce
1 cup Basic Tomato Sauce
1/2 cup ricotta cheese
1/4 cup grated Parmigiano-Reggiano cheese

Steps:

  • Make the meatballs: Preheat oven to 350 degrees.
  • Run bread under water and gently squeeze out excess liquid. Transfer bread to a large bowl and add veal, beef, pork, egg, onion, parsley, basil, cheese, and oregano; season with salt. Using your hands, mix until well combined. Divide mixture into 8 equal portions and roll each portion into a large round meatball. Place meatballs in a large baking dish.
  • In a large bowl, combine tomato sauce and two cups of water. Spoon tomato sauce mixture over meatballs until liquid comes three-quarters of the way up the meatballs, adding more water if necessary. Cover baking dish with parchment paper-lined aluminum foil and transfer to oven. Bake meatballs for 1 hour, rotating dish after 30 minutes.
  • Make the stuffing: In a medium bowl, mix together all ingredients. Transfer cheese mixture to a pastry bag fitted with a large plain round tip; set aside.
  • Remove meatballs from baking dish and discard liquid. Using an apple corer or small knife, cut out a 1/2-inch hole in the bottom of each meatball; fill hole with cheese mixture and transfer meatballs to a large baking dish, hole side up.
  • Serve: Preheat oven to 350 degrees. Spoon tomato sauce evenly over meatballs and transfer to oven. Bake until heated through, 10 to 15 minutes. Top each meatball with a tablespoon of ricotta cheese (it should look like it is oozing from the center) and sprinkle with Parmigiano; return to oven and heat for 3 minutes. Serve immediately.
