AMERICAN SHEPHERD'S PIE
This is an 'Americanized' version of that old standard, Shepherd's Pie. My family loves it! You can prepare your mashed potatoes as you normally would -- adding butter, milk, sour cream, whatever!

- Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 2 quart baking dish.
- In a large skillet over medium-high heat, stir and cook ground beef, onion and celery until juices run clear. Drain. Pour mixture into baking dish with vegetable soup and thyme; stir well. Spread mashed potatoes on top.
- Bake 20 minutes. Sprinkle shredded cheese on top and bake 5 minutes more, or until cheese has melted.

- Preheat oven to 350°. In a large bowl, mash potatoes with sour cream. Add salt and pepper; set aside. In a large skillet, cook beef with onion and red pepper until meat is no longer pink and vegetables are tender; drain. Stir garlic salt into meat mixture. Stir in the soup, corn and milk. , Spread meat mixture into a 13x9-in. baking dish. Top with mashed potatoes; drizzle with butter. , Bake, uncovered, until heated through, 30-35 minutes. For additional browning, place under broiler for a few minutes. Sprinkle with parsley if desired.

We eat BIG in this house! For tonight's dinner it was a unanimous "Shepherd's Pie!" it's warm, filling, EASY, fast to make, cheap, and tastes great! How could I say no?

- 1. Preheat over to 375 degrees. Then brown your hamburger and make 6-8 servings of instant potatoes.
- 2. Drain grease from hamburger then mix in mixed vegetables and cream of mushroom soup.
- 3. pour meat/veggie/soup mix into a 13x9 inch pan and spread around evenly.
- 4. spread grated cheese evenly over meat/veggie/soup mixture.
- 5. spoon mashed potatoes evenly over cheese layer
- 6. Add more grated cheese over mashed potatoes
- 7. Cover with tin foil and bake for 30 minutes (long enough for it to melt the cheese and be hot through and through).
- 8. We like to serve it with simple cornbread. Served with a big spoon or spatula. :)

- Preheat the oven broiler. Brown the ground beef and onion in a cast iron or other oven-proof skillet over medium-high heat. Drain off any excess grease. Stir the soup (or gravy) into the skillet. Mix well. Add any desired vegetables. Season to taste with salt and pepper. Remove the pan from the heat and spread the mashed potatoes over the top. Dot the top of the potatoes with the butter. Place the pan under the broiler and broil until browned. Serve hot.

- Preheat oven to 425°. In a Dutch oven, heat butter and 2 tablespoons oil over medium-high heat. Add mushrooms; cook and stir 4-6 minutes or until browned.
