CREAM-STYLE CORN FOR THE FREEZER
A great way to use up all the corn from summer's crop, freeze into serving-size portions and reheat when needed :)

Steps:
- Set oven to 325 degrees F.
- Butter an extra large baking dish (make certain that the baking dish is large enough to hold all the corn).
- Place half of the corn in a food processor; cover and process until creamy.
- Pour into large baking pan.
- Add milk, butter, sugar, salt and remaining corn.
- Cover and bake for 1 hour and 30 minutes, stirring frequently.
- Cool then freeze in small plastic containers.

MOM PAT'S PORK CHOPS WITH CREAMED CORN
The taste of the chops soaks into the corn for a really good flavor. Very easy and cheaper than most. My sister Cris loves these.

Steps:
- Season chops with salt, pepper, garlic salt; brown chops in skillet.
- Drain the chops of grease and then add 1/2 cup water. Cover and simmer 45 minutes; add can(s) of cream corn to cover chops and salt and pepper corn to taste.
- Cover and simmer for at least 15 minutes more or until pork is done.
- You can bake these puppies in oven if you want at 350° for the same amount of time. I cook longer cause I like my pork really done.
CREAM-STYLE CORN
Steps:
- Shuck the corn and remove all the silks. Wash and drain the corn. Shave just the tips of the kernels using a very sharp knife or vegetable peeler; cut away from you, allowing the tips to fall into a large bowl. Using the back of the knife, scrape the creamy juice from the kernels into the same bowl.
- Melt the butter in a skillet over medium heat and add the corn. Cook, stirring often, until thickened, about 20 minutes. Season with salt.
CREAM CORN LIKE NO OTHER
This is NOTHING like canned creamed corn! My husband is not a fan of corn or creamed dishes, but he thinks this is great. Easy and quick to prepare and is an especially delicious side dish for chicken or pork. Everyone always asks for the recipe.

- In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. For our family of 10, this hot dish always worked well as a "meal in itself", and it's a perennial favorite at get-togethers with our relatives. - In a large skillet, over medium heat, cook the pork, celery, red pepper and onion in oil until the meat is browned and vegetables are tender. In a large bowl, combine the pork mixture, noodles, soups, corn, milk, salt and pepper. , Transfer to an ungreased 13-in. x 9-in. baking dish. Combine crumbs and butter; sprinkle over top. Bake, uncovered, at 350° for 45-50 minutes or until meat is tender. Freeze option: Cool unbaked casserole. Sprinkle with crumb topping; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

- Remove the bones from the pork chops and cut into ½-inch cubes. Place in a medium bowl. Combine with fish sauce, sugar, a dash of white pepper, and 1 teaspoon oil. Cover with plastic wrap and marinate in the fridge for about 1 hour.
- In a medium pot over medium-low heat, add creamed corn and milk. Cook until the mixture has reduced by half and like a thick sauce, about 45 minutes, stirring often and scraping down the sides of the pot.
- Just about 5 minutes before the creamed corn sauce is ready, in a medium saucepan over medium-high heat, heat up 1 tablespoon oil. Add the pork and cook until just cooked through, about 5 minutes. Remove from heat.
