SOUR CREAM CUCUMBERS
We have a tradition at our house to serve this creamy cucumber salad with the other Hungarian specialties my mom learned to make from the women at church. It's especially good during the summer when the cucumbers are freshly picked from the garden. -Pamela Eaton, Monclova, Ohio

- In a large bowl, whisk sour cream, vinegar, sugar and pepper until blended. Add cucumbers and onion; toss to coat. Refrigerate, covered, at least 4 hours. Serve with a slotted spoon.

CREAMED CUCUMBERS
We moved here about 3 years ago and we love our home in the country. We plant a garden each year, making sure there's always plenty of cucumbers. I must admit I never really cared for cukes until my mother-in-law prepared them this way. Now they're one of my favorite vegetables.

- Combine cucumbers and green onions in a large bowl. Cover and let stand for 1 hour. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours.

- In a bowl, mix the mayonnaise, milk, sugar, and vinegar until smooth. Place cucumber slices in the bowl, and toss to coat with the dressing. Season with salt and pepper. Chill 30 minutes in the refrigerator before serving.

A very refreshing side, and a good way to use up the cucumbers during the summer while they are so abundant.

Steps:
- Peel and slice cucumbers thin.
- Vertically slice onions thin into 1-1/2 " long slices.
- Put onions and cucumbers into a bowl, sprinkle with salt and toss to coat.
- Let mixture drain in a colander over a bowl for about an hour.
- Mix sour cream, mayonnaise, Splenda, Vinegar, and dill weed or chives together and pour over cucumbers and onions.
- Stir together thoroughly, and refrigerate for at least an hour.

- Place yogurt in a colander lined with cheese cloth set over a bowl and let it sit for a one hour (or overnight in the fridge).
- To make the dressing: Mix together yogurt, garlic, lemon juice, 1/2 teaspoon salt and pepper in a small bowl. Set aside.
- If preferred, to get rid of some of the juices of the cucumbers, place sliced cucumbers in a colander set in a bowl and sprinkle them with 1/2 teaspoon salt. Give them a toss and let them sit on the counter for 15-30 minutes.
- When ready to assemble, remove the cucumbers (no need to rinse) from the colander and place in a salad bowl along with sliced radishes and chopped green onions. Drizzle it with the dressing and give it a toss.
