HAMBURGER GRAVY OVER MASHED POTATOES
I got this from a local cookbook. It's great for someone like me who is is not-so-hot at making gravy. Serve with sliced cantaloupe or tomatoes and hot biscuits.

Steps:
- Brown ground round. Drain any grease. Add margarine and flour. Cook for a few minutes over medium heat. Add milk. Increase heat and cook, stirring constantly until thickened. Add salt and pepper to taste. Add the cayenne pepper.
- Serve over mashed potatoes.

- Brown beef in a large skillet over medium high heat. Stir in flour, bouillon, salt and pepper. Saute all together for about 5 minutes or until flour is absorbed. Gradually stir in milk and Worcestershire sauce. Bring all to a simmer, stirring constantly. Cook until thickened, about 5 to 10 minutes. Serve hot!

- Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high until tender, 8-10 minutes, stirring twice., Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles, 6-8 minutes; drain. Stir in salt and pepper. In a small bowl, whisk soup and milk until blended; add to beef. Stir in potatoes. Sprinkle with cheese. Reduce heat to low; cook, covered, until cheese is melted.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Add 1-1/2 cups beef broth, onion, parsley, basil, garlic powder, seasoned salt and pepper. - In 12-inch nonstick skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.

- Preheat the oven to 350 degrees F (175 degrees C). Spray the bottom and sides of a 9x13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add yellow onion, bell peppers, celery, and 1/2 of the green onion; saute until vegetables are soft, about 5 minutes. Add garlic, tomato sauce, 1/2 of the parsley, paprika, garlic powder, onion powder, red pepper flakes, meat tenderizer, salt, and pepper; cook until fragrant, about 1 minute. Stir in Worcestershire sauce and browning sauce. Drain oil and remove from the heat.
- Line the prepared baking dish with refrigerated biscuits; divide them evenly and spread out to cover the pan, overlapping if necessary. Spread drained ground beef mixture evenly on top of the biscuits. Spread diced tomatoes over the beef, then evenly scatter frozen vegetables. Spread mashed potatoes over the top, and sprinkle with remaining green onions, Cheddar cheese, and remaining parsley. Cover with foil.
- Bake in the preheated oven for 25 to 30 minutes. Remove foil and bake until cheese is golden and melted, another 5 minutes. Serve immediately.

- Preheat oven to 400°.
- Combine the beef stock and water in a saucepan; bring to a simmer.
- Place the beef in a 13x9-inch baking pan; pour stock over beef; bake at 400° for 2 hours (recipe does not say to cover) or until beef is tender.
- Remove beef from cooking liquid; cover and keep warm.
- Strain cooking liquid through a sieve into a bowl.
- Place a zip-lock bag inside a 2-cup liquid measuring cup; pour liquid into bag; let stand 10 minutes (fat will rise to the top).
- Seal bag; carefully snip off 1 corner of bag; drain liquid into saucepan, stopping before fat layer reaches opening; discard fat.
- Bring liquid to a boil; reduce to simmer.
- Cook 20 minutes or until reduced to 1 cup.
- Remove from heat and stir in thyme, salt, and pepper.
- To make the potatoes: put the potatoes in a saucepan; cover with water.
- Bring to a boil; lower heat and cook 12 minutes or until very tender.
- Drain; return potatoes to pan.
- Add in milk and next 3 ingredients.
- Mash with a potato masher to desired consistency.
- Cook 2 minutes or until heated through.
- Serve with beef.
- Serve sauce over beef; garnish with thyme.

How to make Creamed Ground Beef Over Mashed Potatoes

Steps:
- Put the onions, garlic, and ground beef in a large skillet.
- Cook until ground beef is no longer pink.
- Drain excess fat, then add salt and peppers.
- Remove to a separate bowl.
- Melt butter in the skillet.
- Add flour, salt and pepper.
- Cook, stirring constantly over low heat for about two minutes.
- Do not allow to burn.
- Gradually add milk, stirring constantly after each addition and allowing to boil before adding more.
- This results in a smooth sauce.
- When all milk has been added, continue to stir constantly and bring to a boil.
- Allow to boil for one minute or until sauce is thick, continuing to stir.
- Remove from heat and stir into beef mixture.
- Prepare mashed potatoes: Place potatoes in a pot with enough water to cover by about 1/2 inch.
- Cook until potatoes are tender.
- Pour off cooking water (or save for a terrific addition to breads).
- Add butter and milk (or cream).
- Mash to desired consistency.
- Serve ground beef mixture spooned over the mashed potatoes.
- Variations: Add one teaspoon of your favorite spice blend to make a new and exciting variation.
- You can eliminate the cayenne pepper if you don\'t like spicy hot foods.
- If you do, then please add more!
