2 medium onions, finely chopped
1 tablespoon butter
2 teaspoons all-purpose flour
1/8 teaspoon salt
1/8 teaspoon white pepper
1/3 cup 2% milk
1 tablespoon heavy whipping cream
3 tablespoons grated Parmesan cheese

Steps:

  • In four batches, place spinach in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-4 minutes or until wilted. Transfer to a large bowl; keep warm., In a large skillet, saute onions in butter until tender. Stir in the flour, salt and pepper until blended. Gradually add milk and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheese. Drain spinach; add sauce and toss to coat.

½ teaspoon ground nutmeg
½ teaspoon salt

1 pound fresh spinach

Steps:

  • In a medium saucepan over medium heat, mix heavy cream, butter, nutmeg, salt and pepper. Stirring constantly, bring to a boil, then reduce heat to simmer.
  • Place spinach in a vegetable steamer, and steam until leaves are wilted. Drain in a colander, pressing out excess water with a large spoon.
  • Coarsely chop spinach in a food processor, and gradually stir into the heavy cream mixture. Briefly return to boiling, then remove from heat.

1 2/3 cups milk
5 ounces butter
5 ounces flour
1 pinch freshly grated nutmeg
1 pinch salt & freshly ground black pepper
5 ounces ciabatta, made into bread crumbs
7 ounces parmesan cheese, freshly grated
1/2 lemon, zest of

Steps:

  • Preheat the oven to 400°F Bring a large pan of water to the boil. Add the spinach and blanch for 1-2 minutes, drain, plunge into cold water and squeeze dry.
  • Heat the milk in a saucepan. Meanwhile, melt the butter in a heavy-based saucepan. Mix in the flour and gradually stir in the hot milk, stirring until the mixture thickens into a white sauce.
  • Stir in the spinach and season with freshly grated nutmeg, salt and freshly ground pepper, mixing well.
  • Place the spinach mixture into a rounded ovenproof dish and top with a layer of stale ciabatta breadcrumbs and then a layer of Parmesan cheese.
  • Sprinkle over the lemon zest, then top with the breadcrumbs and Parmesan cheese.
  • Bake for 15 minutes and serve warm from the oven.

4 pounds of fresh spinach
1 small onion, diced
4 tablespoons butter
1/2 cup sour cream
1 pound cream cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste

1/2 cup bread crumbs

Steps:

  • Preheat oven to 325 degrees.
  • Trim and wash the spinach. In a large pot of salted, boiling water add spinach. Simmer the spinach, stirring occasionally, for 10 minutes. Then drain, refresh, and squeeze dry.
  • Saute the onions in the butter until tender. Add the cooked spinach, sour cream, cream cheese, grated Parmesan cheese, salt, pepper and nutmeg to taste. Transfer mixture to a buttered baking dish.
  • Saute 1/2 cup bread crumbs in 2 tablespoons of butter until browned. Sprinkle bread crumbs on spinach. Put it in the oven and bake for 20 minutes, then serve.

  • Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. 2 teaspoons olive oil
2 (16 ounce) bags fresh spinach
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch freshly grated nutmeg
1 tablespoon butter
2 tablespoons minced shallot
¾ cup heavy whipping cream
1 teaspoon freshly grated lemon zest
2 tablespoons finely shredded Parmigiano-Reggiano cheese

Steps:

  • Pour olive oil into a large soup pot, place over high heat, add spinach, and cover. Cook for 1 minute, uncover, and lightly stir until most of the leaves are bright green and wilted, about 2 minutes. Quickly drain spinach in a strainer and transfer to a plate lined with 4 or 5 paper towels. Once cool enough to handle, squeeze as much liquid from the spinach as possible. Transfer spinach to a cutting board and coarsely chop.
  • Mix salt, black pepper, cayenne pepper, and nutmeg in a small bowl.
  • Place a large skillet over medium heat, melt butter in skillet, and stir shallot in the hot butter until just barely golden and translucent, 3 to 4 minutes. Stir seasoning mixture into shallot mixture and pour in cream. Raise heat to medium-high and reduce cream sauce to about half, about 5 minutes. Stir in lemon zest.
  • Reduce heat to low and toss spinach with cream sauce in skillet. Cook and stir until spinach is heated through and coated, about 2 minutes. Stir Parmigiano-Reggiano cheese into spinach until thoroughly combined; serve immediately.

10 ounces frozen chopped spinach
3 ounces light cream cheese
1 tablespoon butter, melted
1/8 teaspoon nutmeg
1 tablespoon parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook spinach according to package directions and drain well (I microwave it in an uncovered container for about 4.5 minutes).
  • Place spinach in a large bowl, and stir in softened cream cheese, melted butter and nutmeg.
  • Spoon into small casserole coated in cooking spray.

What can be better than a side of creamy, nutmeg-infused spinach? Perfect to accompany any roast and especially good at Christmas

25g butter
1 small onion, finely chopped
2 tbsp plain flour
200ml full-fat milk
2 x 200g bags spinach
100ml single cream
fresh nutmeg, for grating

Steps:

  • Heat 25g butter in a saucepan, then add 1 finely chopped small onion and cook for 5 mins until softened.
  • Stir in 2 tbsp plain flour and cook for 2 mins, then slowly start to whisk in 200ml full-fat milk. When it has all been incorporated, gently cook for 5 mins until the sauce has thickened.
  • Meanwhile, place two 200g bags spinach in a large colander. Pour over a kettle full of boiling water until the leaves have wilted (you may have to do this twice).
  • Place the spinach in a clean dishcloth, squeeze out any excess liquid, then roughly chop.
  • Stir into the sauce with 100ml single cream, gently heat, then finely grate over some fresh nutmeg and season well.

  • Bring a large kettle half filled with lightly salted water to a boil. Add the spinach, pushing it down into the pot with a large spoon.
