12 ounces (340g) cream cheese, (softened to room temperature)
1 cup (125g) confectioners' sugar
Juice of 1 orange, (about ¼ cup)
1 teaspoon orange extract
pinch kosher salt
1 cup (238g) whipped topping, (plus more for garnish)

Steps:

  • In a large bowl, beat cream cheese until it is light and fluffy.
  • Add in the confectioners' sugar, orange juice, orange extract, and salt and beat until everything is combined.
  • Gently fold in the whipped topping.
  • Equally divide orange mousse into cups and refrigerate uncovered until thickened, (about 1 hour up 24 hours).
  • When ready to serve, top with remaining whipped topping

8 ounces neufchatel cheese, softened or 8 ounces cream cheese
1/2 cup heavy whipping cream, whipped to stiff peaks with
1/4 cup confectioners' sugar (1 cup total volume)
1 (4 ounce) box fat-free instant vanilla pudding mix
1/2 cup orange sugar-free Kool-Aid mix, warmed (can also use OJ or Tang)
1 navel orange, cut in half and sliced (optional)
mint leaf (optional)

Steps:

  • Microwave the cream cheese for 20-30 seconds and stir (should be very soft and room temperature). Blend with whipped cream by gently folding or stirring. Set aside.
  • In a seperate bowl, thoroughly mix pudding with the warmed orange drink to dissolve. Let sit for a few minutes, then mix again. Gently fold or stir in the cream cheese mixture a little at a time (it's great to get a swirl like effect).
  • Cover top of mousse with plastic wrap and chill for at least 4 hours. Scoop into dessert or champagne glasses using a large melon baller and garnish with fresh orange slices on the side of the glasses and top with a mint leaf.

2 cups (1 pint) cold heavy whipping cream
3 tablespoons confectioners' sugar, or to taste
1 teaspoon pure vanilla extract
Creamsicle Mousse
1 cup frozen orange juice concentrate, thawed
1/3 cup granulated sugar
1 (7 oz) jar marshmallow cream
1 cup sweetened whipped cream, from above
Orange food coloring, optional but fun
Parfaits
Vanilla ice cream
Creamsicle Mousse, from above
1 cup sweetened whipped cream, from above
Orange slices or mandarin orange segments, for garnish

Steps:

  • Whip the Cream: In the bowl of your stand mixer, using the whisk attachment, beat the cream on low speed until foamy. Add the confectioners' sugar and vanilla and continue whipping, increasing the speed to medium, until it reaches firm peaks. Make the Mousse: In the bowl of your stand mixer, combine the thawed frozen orange juice concentrate, granulated sugar, and marshmallow fluff. Beat until smooth. Add 1 cup of the whipped cream and mix until just combined with no white streaks. If you want, add a few drops of orange food coloring and mix it in. Pour into a large bowl and refrigerate to set. Can be made a day in advance. Stir before assembling the parfaits. To Serve: Put a spoonful of the mousse in the bottom of each serving bowl (preferably glass so you can see the layers). Scoop some ice cream into each bowl and top with more of the mousse. Add more ice cream, mousse, and top with whipped cream. Garnish with orange slices and serve immediately.

1/3 cup plus 1 tablespoon cornstarch
1-1/2 cups cold water
3 large egg yolks, lightly beaten
3 tablespoons butter, cubed
2 teaspoons grated lemon zest
1/2 cup lemon juice
CRUST:
1 cup all-purpose flour
1 cup finely chopped walnuts
1/2 cup cold butter
TOPPING:
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
2 cups cold whole milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 teaspoon vanilla extract
1 carton (16 ounces) frozen whipped topping thawed

Steps:

  • In a small saucepan, combine sugar and cornstarch; gradually stir in water until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 1 minute. Remove from the heat; stir in butter and lemon zest. Gently stir in lemon juice. Refrigerate until cool., In a bowl, combine flour and nuts. Cut in butter until mixture resembles coarse crumbs. Press onto the bottom of a greased 13x9-in. baking dish.   • Preheat oven to 350 degrees F (175 degrees C).

  • In a high speed blender, combine the soaked almonds and the maple syrup, coconut oil, vanilla, lime zest, and lime juice. Blend, working up to the blender's highest speed until the mixture is completely smooth. This will take upwards of 5 minutes. The mixture will appear almost whipped but will still be pourable. If there are grainy bits or small chunks or any perceptible texture besides glass-like smoothness, keep blending.
  • In six serving glasses or dishes, layer the graham or Oreo wafers and the Almond Breeze mixture. Refrigerate until chilled.
