This pasta dish with bacon and courgettes is deliciously rich and creamy

4 large courgettes
500g pack tagliatelle
8 rashers streaky bacon , chopped
1 red chilli , deseeded, if you like, and finely chopped
2 egg yolks
75g /2 ½oz parmesan , grated, plus extra to serve
4 tbsp double cream
zest 1 lemon

Steps:

  • Coarsely grate the courgettes, then place in a sieve over a bowl. Press to squeeze out all the liquid - this may take a few mins, but try to drain away as much as you can.
  • Cook the pasta in boiling salted water following pack instructions. Meanwhile, heat a large, non-stick frying pan, then dry-fry the bacon, stirring often, until crisp. Add the chilli and cook for 1 min more, then tip in the courgettes and cook on a high heat for 2-3 mins.
  • Mix together the egg yolks, cheese, cream and lemon zest. When the pasta is cooked, drain it, reserving a little of the cooking water. Tip everything back into the pasta pan and toss together. Divide into bowls to serve, with extra Parmesan.

A quick and creamy carbonara-style tagliatelle recipe that showcases your delicious home grown courgettes, contrasted with crème fraîche and smokey pancetta.

150 g bacon (lardons)
2 courgettes
200 g crème fraîche
4 medium eggs
1 garlic (clove crushed)
Grated parmesan
1 tsp olive oil
400 g tagliatelle

Steps:

  • Heat the oil in a large frying pan on a medium heat. Once hot add the bacon and fry for around 5 mins until it starts to crisp. Increase the heat and add the courgette. Cook for 5 mins until soft and starting to brown. Add and stir in the garlic and cook for a further minute. Add and stir in some salt and pepper and set aside.
  • Bring to the boil and cook the tagliatelle (based on the cooking instrutions on the packet). Remove a cupful of the cooking tagliatelle water for use later on. Drain the tagliatelle and add to the frying pan with the bacon and courgette. Heat on low and mix everything together with the crème fraiche and half the parmesan. Add some of the pasta water to loosen the sauce a little bit if you feel the mix is a bit too sticky.
  • Crack the 4 eggs into a seperate frying pan and fry to your liking. (Sunny side up, over easy etc)
  • Serve creamy pasta into bowls and top each with a fried egg. Season to taste and sprinkle over the remaining parmesan and enjoy. Serve alongside garlic bread for an extra treat!

Steps:

  • Add the olive oil to a large frying pan or wok followed by the vegetables and bacon. Add salt and pepper to season and cook for 10 minutes on a medium heat.
  • Next, add the tagliatelle to boiling water and begin to boil on a medium heat (this will take around 10 minutes to cook and will co-inside with the next step).
  • Add the crème fresh, garlic and herbs to your frying pan. Stir thoroughly and cook for a further 10 minutes. Then, add the Parmesan and stir.
  • While the Parmesan is melting into the sauce, drain the tagliatelle and then add this to your sauce and mix thoroughly to allow all of the pasta to be coated. Then serve.
