- In a large salad bowl, toss the cabbage, carrots and green pepper. In a small bowl, whisk the remaining ingredients. Pour over cabbage mixture and toss to coat. Chill for at least 2-3 hours.

- In a large salad bowl, place the cabbage, onion, green bell pepper, red bell pepper and carrot. Combine the vinegar, sugar, salt, pepper and vegetable oil in the bowl with the vegetables. Toss the mixture until the vegetables are fully coated with the marinade.

GREEN COLESLAW
A cooked dressing makes this coleslaw different than the usual creamy type, and if you buy prebagged coleslaw mix it's also incredibly fast. I don't mind some orange with my green! I usually leave out the green pepper, since I'm not crazy about peppers in coleslaw, so try it with or without. Requires some refrigeration time.

Steps:
- Toss together cabbage, pepper and onion.
- Sprinkle with sugar and toss.
- Combine remaining ingredients in a saucepan and bring to a boil.
- Pour over the slaw and toss. Let stand one hour.
- Refrigerate a minimum of an hour, but a few hours is good.

- Using a knife cut the savoy cabbage into thin shreds. Wash and dry the celery and radishes and cut them into thin slices.
- In a blender combine the ingredients for the dressing and blend until well mixed.

BUTTERMILK GREEN GODDESS SLAW
This herby coleslaw variation was adapted from "The Animal Farm Buttermilk Cookbook" (Andrews McMeel Publishing, 2013) by Diane St. Clair. In it, a tangy buttermilk- and avocado-spiked green goddess dressing takes the place of the usual mayonnaise mix, for a slaw that's both lighter and fresher tasting. Like most coleslaws, it gets better as it sits so, if you have time, plan to make it a few hours ahead. Save any extra dressing to use as a dip for cut vegetables or for other salads. It will keep for up to two days in the fridge.

- Make the dressing: Put avocado, buttermilk, lemon juice, anchovy, scallions, garlic, parsley, chives, tarragon, olive oil and basil in a food processor or blender, and process until smooth and uniformly green, 1 to 2 minutes. Taste and season with salt and black pepper. Set aside.
- Make the slaw: In a large bowl, combine cabbage, scallions, jalapeño and cilantro. Pour 1 cup of green goddess dressing over slaw and toss well to coat. Season with salt and pepper.
- Garnish with more cilantro before serving. Serve immediately, or cover with plastic wrap and refrigerate for a couple of hours. Toss again before serving, adding more dressing if you like. Leftover dressing will keep for another day or two in the fridge.
GREEN PAPAYA SLAW

- Whisk together 2 tablespoons Asian fish sauce such as nam pla, 1 tablespoon plus 1 1/2 teaspoons peanut oil, 1/4 cup fresh lime juice, 1 tablespoon plus 1 teaspoon palm sugar, and 2 tablespoons tiny dried shrimp in a large bowl. Add 1 peeled and very thinly sliced shallot and 1 fresh Thai chile, thinly sliced crosswise, and let stand for 15 minutes, then add 1/2 green papaya, peeled, seeded, and julienned, and 1 peeled and julienned medium carrot and let stand for 15 minutes to 30 minutes longer. Tear 2 tablespoons fresh mint leaves and 1/4 cup cilantro leaves; crush 1/4 cup peanuts. Stir herbs and nuts into salad. Taste and adjust seasoning with additional fish sauce, lime juice, sugar, and chile so there is a proper balance of hot, sour, salty, and sweet. Serve immediately.
- Green papaya can be found in most Asian markets. The flesh should be pale green and the seeds should be white. If the flesh is not green and the seeds are gray or black, the papaya is too ripe and will be too sweet. As a substitute, try a combination of julienned carrot, jícama, and Belgian endive.
- Palm sugar, from the Palmyra palm or the date palm, is golden brown in color and sold in many guises (most often in blocks or tins or as a paste in tubes). It is available at Asian markets. Light brown sugar can be substituted.
- Dried shrimp are used in Asian and Latin American cooking. Look for them in Asian markets.
