- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Reserve 2 tablespoons bacon fat in the skillet and discard the rest. Chop bacon when cool enough to handle.
- Add 1 tablespoon olive oil and onion to reserved bacon fat in the skillet. Cook over medium-high heat until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Pour vermouth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon, about 1 minute. Mix in chopped bacon.
- Drain spaghetti, transfer to a large serving bowl, and mix in remaining 1 tablespoon oil. Add bacon-onion mixture, Parmesan cheese, cream, eggs, and pepper to the hot pasta; stir until spaghetti is well coated and sauce is creamy.

- Drain pasta. Add to sauce in skillet along with remaining ingredients; mix lightly.

- Cook bacon until crispy over medium high heat, drain and set aside, reserving 2 tablespoons bacon grease.
- Set the pasta to boil according to the package's directions.
- Whisk cream, Parmesan, egg yolks, and worcestershire sauce in a medium sized bowl. Whisk in the warm bacon drippings that had previously been set aside. Whisk until blended and set aside.
- Drain pasta and return to pot. Do not rinse! The heat from the pasta will cook the egg yolks in the cheese mixture. Carefully add cream mixture and toss until pasta is well coated. Add bacon, and pepper to taste. Serve.

CREAMY AUTHENTIC CARBONARA
I found this recipe in an old cookbook that the SO picked up from Goodwill for me. It's so good (and so fattening) and he LOVES it! You can substitute half and half or light cream for the heavy cream to save on fat and cals, and you can also use bacon instead of the proscuitto as it's quite expensive.

- In a large pot, prepare the pasta based on cooking instructions. Set aside. Fry the bacon but not too crispy. drain and cut into small pieces. Set aside. Fry the ham, drain and cut into small square pieces. Set aside. In a pan, heat oil and saute garlic and onion. Add 3/4 of fried bacon and ham. Add evaporated milk and creamed mushroom soup. Add the all purpose cream and grated parmesan cheese. Stir and bring to boil. Season with ground pepper. Add more evaporated milk or a cup of water if the sauce is too creamy or salty. Simmer until beginning to thicken. Remove from heat. Prepare pasta on pasta tray, top with grated Parmesan cheese together with the remaining bacon and ham bits and chopped parsley. - Fry bacon until crisp.
- Remove bacon, drain fat and pat bacon dry.
- Add water to frying pan to deglaze and remove Fond. Add this to your spaghetti cooking water.
- Cook Spaghetti to Al Dente in salted bacon water.
- Chop bacon into small pieces.
- Separate egg whites and whip until stiff.
- Add bacon, cheese and broken egg yolks to whipped egg whites.
- Add a little spaghetti water to temper eggs and gently stir to mix.
- Add spaghetti toss and top with flat leaf parsley.

- Beat the eggs, cream, Parmesan, parsley, salt and the red pepper together in a bowl. I just used a fork. Fry the bacon until crisp, then crumble and set aside.
- With 1 -2 Tbsp. bacon grease, saute the onion and the mushrooms until the onions are translucent and golden.
- Drain the pasta and while still warm, add to the onions and mushrooms. Pour cream mixture into the pasta, and stir over low heat for one to two minutes. (**I doubled the sauce recipe and I saved a bit of the pasta water, just in case my sauce got thicker than I liked – simply add a bit if you need it) Don’t do this on high heat, or you will make scrambled eggs.
- Crumble the crisp bacon over the top & serve with additional Parmesan. I hope that you make this. And that it brings your belly as much pleasure as it brought mine. I share because I love you. And if you don't want to be as sinful as I was, feel free to sub in a quinoa or rice pasta instead of homemade.
