3-4 chicken breasts, boneless
1 can (10 ounces) cream of chicken soup
1 can (10 ounces) cheddar soup
1 can (14 ounces) can chicken broth
1/2 teaspoon salt
1 teaspoon garlic, minced
1 cup sour cream
6 cups broccoli florets, thawed
1 cup cheddar cheese, shredded

Steps:

  • Place both soups, chicken broth, salt, and garlic in a large pot over high heat. Bring to a boil and whisk until smooth. Place chicken in, cover with lid and cook on low for 30 minutes. When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli. Cook for an additional 5 minutes. Serve over steamed rice and sprinkle with cheese.

Steps:

Steps:

2 cups long grain brown rice
4 cups chicken broth
2 (12 ounce) packages frozen broccoli
2 teaspoons extra virgin olive oil
1/2 medium onion, diced
2 garlic cloves, minced
1 lb boneless chicken breast, diced
1 teaspoon salt
2 cups 1% low-fat milk or 2 cups almond milk
3 tablespoons unbleached white flour
1/3 cup organic plain Greek yogurt
1 1/2 cups shredded cheddar cheese

Steps:

  • Spray a 9x13" baking dish with cooking spray and set aside.
  • Bring broth to a boil in a medium pot. Once boiling, add rice. Reduce heat to medium-low and simmer, covered, for 45 minutes. Meanwhile, cook broccoli according to package directions and set aside.
