Steps:
- Bring a large pot of salted water to boil. Add pasta and cook for time per packet MINUS 2 minutes (finishes cooking in Sauce).
- SCOOP OUT a mugful of pasta cooking water, then drain.
- Meanwhile, cook bacon until golden, drain on paper towels.
- Season chicken on both sides, cook in bacon fat, 2 minutes each side.
- Wipe pan - optional, to keep sauce pretty and white, and for a buttery clean tasting sauce rather than very bacony (Note 3).
- Over medium heat, melt butter. Add garlic and onion, cook for 3 - 4 minutes until onion is light golden and soft.
- Add cream, about 3/4 cup pasta water and parmesan. Stir, then simmer for 2 minutes until it reduces slightly - you don't need to be exact here. Season with salt & pepper.
- Add pasta and toss gently in the sauce for about 1 1/2 minutes. The sauce will thicken and coat the pasta, do this step until you get the sauce consistency you want. If your sauce gets too thick, add a splash of pasta water.
- Toss through bacon and chicken.
- Serve immediately, garnished with parmesan and parsley!

- Add the mushrooms and cook for a further 3 minutes, while stirring occasionally. Then, add the broth, milks (or cream if using), salt and pepper, and bring to a gentle simmer. Add the pasta and simmer until pasta is al dente, about 15 minutes, while stirring occasionally.
- Stir in the parmesan cheese until it melts through the sauce. Remove from heat and allow to sit for 5 minutes to allow the sauce to thicken. Slice the chicken into strips and stir through the pasta.
- Garnish with fresh parsley and extra parmesan, if desired
- Enjoy!

Steps:
- Break fettuccine into sixths (I broke chunks of noodles in half then each half into thirds.) Cook pasta in a big pot of salted, boiling water until just under al dente - it will continue cooking in the sauce. Drain then set aside.
- Melt butter in a large skillet over medium heat then add carrot, celery, and shallot. Season with salt and pepper then saute until tender, 5-7 minutes. Sprinkle in flour then whisk and cook for 1 minute. Slowly pour in chicken broth and milk while whisking constantly to avoid lumps. Turn heat up to medium-high until bubbling then turn heat back down to medium, add parsley and more salt and pepper then cook, stirring occasionally, until thickened and bubbly, 5 minutes.
- Add pasta to the sauce then stir to combine and cook for 2 more minutes. Remove from heat. Sauce will continue to thicken as it cools.
