CREAMY CHEESY CAULIFLOWER GRATIN
Cheesy and creamy cauliflower gratin that's easy to prepare and makes for one delicious Holiday side dish recipe!

- Preheat oven to 400F.
- Melt 2 tablespoons of butter in a skillet.
- Add the flour and whisk over medium-high heat for 1 minute.
- Add the milk and the half-and-half; cook, whisking constantly, until thickened, about 5 minutes.
- Remove skillet from heat and whisk in the cheese.
- Whisk in the thyme, Italian seasoning, salt, pepper, chili powder, and nutmeg; set aside and keep warm.
- In a large skillet, bring 1/2 inch of salted water to a boil.
- Add the cauliflower florest; cover and cook over high heat for 5 minutes.
- Drain the cauliflower in a colander.
- Melt remaining butter in a skillet.
- Add the onion and cook over medium-high heat for 3 minutes.
- Stir in the minced garlic and continue to cook for 1 minute, or until fragrant.
- Add the prepared cauliflower florets to the skillet and cook, stirring frequently, for 2 minutes.
- Transfer the cauliflower to a 2 quart baking dish and spread the prepared cheese sauce on top.
- Sprinkle the top with the chopped almonds and paprika; bake in the oven for 20 minutes, or until bubbling and browned on top.
- Let stand for 10 minutes before serving.

Steps:
- Preheat oven to 400 degrees F
- Place cauliflower in basket steamer over pot of water and steam for 5-6 minutes until tender but still firm.
- Add butter to a sauce pan over medium heat. When melted add flour and cook 1 minute stirring to blend.
- Turn heat to medium low and add milk. Stir until thickened. Remove pot from heat and add grated cheeses a little at a time stirring after each addition. Stir in pepper and garlic powder.
- Place steamed cauliflower in a buttered 9"x9" ovenproof dish and pour cheese sauce evenly over cauliflower. Sprinkle with breadcrumbs and bake 20-25 minutes until lightly browned.

SWISS CHEESY CAULIFLOWER
This is a family favorite way to prepare cauliflower! The creamy cheese sauce adds great flavor to this vegetable. Cheddar cheese can also be substituted in place of the Swiss.Update: 12/26/2008 when we made this again we used a few extra ingredients - nutmeg, crushed red pepper flakes & instead of garlic powder I had some left over roasted garlic and we added that as well, it added that exra zing that I thought it needed!l ;)

Steps:
- Preheat oven to 350F (175C).
- Lightly butter a small baking dish.
- Place the cauliflower in a saucepan with enough water to cover.
- Bring to a boil and cook for 5 minutes, or until tender but crisp.
- In a separate saucepan, melt the butter over medium heat and gradually mix in the flour, salt, pepper, garlic powder {or roast garlic}, onion powder, nutmeg, red pepper flakes, and milk.
- Bring to a boil, remove from heat, and mix in the Swiss cheese until melted.
- Spread about 1/4 cup of the melted Swiss cheese mixture in the bottom of the prepared baking dish.
- Place cauliflower in the dish, and top with the remaining cheese mixture.
- Bake uncovered 20-25 minutes until bubbly.
