CRISPY AND CREAMY NEW POTATO PIE

Steps:
- Preheat oven to 400 degrees F.
- Wash and boil potatoes in salty water with bay leaf until fork tender. Drain potatoes and mash along with horseradish, sour cream, and chives. Season with salt and pepper.
- Put mixture into a 10-inch skillet with 1 tablespoon olive oil and bake until golden and crispy. To serve, invert onto a plate and cut into pieces.
MASHED POTATO PIE RECIPE BY TASTY

- Preheat oven to 350°F (180°C).
- Place butter crackers in a food processor and blend until they are a fine, sandy texture. Transfer to a small mixing bowl.
- Add egg and melted butter to the crumbled crackers. Stir until crumbs become a clumpy, wet sand texture. Place the cracker mixture in the base of a 9-inch (23-inch) pie dish to create the crust.
- Use a measuring cup to smooth the surface. Once the surface is smooth, use a fork to prick the base and sides of the crust.
- Bake for 10 minutes. Remove from oven and let cool for 10 minutes.
- Mash russet potatoes in a large mixing bowl. Once thoroughly mashed, add butter, ¼ cup(60 gram) sour cream, milk, salt and pepper and mix together with large spoon or spatula.
- Spread half of the mashed potatoes over the cooled cracker crust, about ¼-inch in thickness.
- Cover mashed potatoes with a layer of cheddar cheese, making sure to save some for the top.
- Spread the other half of mashed potatoes over the cheese layer. Sprinkle bacon bits and remaining cheese over the top.
- Bake for 20 minutes.
- Serve with sour cream and green onions.

MOM'S TWO-CRUST POTATO PIE
I grew up in a Catholic family, when Catholics could not eat meat on Fridays. Fish and a side dish were Friday meals. One particularly favorite side-dish was this recipe. Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. - Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with 1/4 cup butter, 1/4 cup milk, salt, and black pepper to make medium-stiff mashed potatoes; stir in the American cheese.
- Preheat oven to 375 degrees F (190 degrees C).
- Fit a crust into a 9-inch pie dish, and fill with the potato mixture. Place the top crust on the pie, roll the edges together and crimp with a fork to seal. Stir the melted butter and 2 teaspoons of milk together in a small bowl, and brush the mixture all over the pie crust. Cut several vent holes in the top of the crust.
- Bake the pie in the preheated oven until the crust is golden brown, about 45 minutes; if the edges are getting too brown, wrap them in aluminum foil.

- Combine flour, sugar and salt in a bowl; cut in the shortening and butter until crumbly. Add water and mix lightly with a fork. Shape dough into a ball; divide in half. On a lightly floured surface, roll out one half to fit a 9-in. pie plate. For filling, combine potatoes, onion, salt, pepper and parsley. Spoon into crust; dot with butter. Roll out remaining dough to fit top of pie; place over filling. Seal and flute edges; make several slits in top crust. Bake at 375° for 1 hour. Pour cream into slits in crust; return to oven for 25 minutes or until potatoes are tender. Let stand 5 minutes before cutting.

This is heavenly but not for the dieter! I haven't made it for a long time but it is just beautiful to serve and I guarantee that you will get raves! Follow the baking steps exactly.

Steps:
- Bring a lot pot of water to a boil and place the potatoes in the water.
- Bring water back to a boil, reduce hear to medium-low& simmer for only 3 minutes.
- Drain potatoes well and cool to where you can handle them.
- Spread potatoes on clean tea towels to finish cooling and remove all moisture.
- Roll out your puff pastry on a lightly floured surface to apprx 13" x 1/8" thick and place in a 9" pie plate, trim off the excess& save the cut off pastry.
- Heat oven to 425F.
- Arrange a layer of potatoes in the lined pie plate.
- Drizzle with some melted butter, salt & pepper.
- Repeat layers until all the potaoes,butter salt & pepper are in the pie.
- Roll out the left over puff pastry to apprx 1/8" and cut ten 1/2" strips.
- Brush the edges of the pie with the egg mixture.
- Arrange strips lattice fashion over the potatoes pressing edges to seal.
- Brush lattice with the egg mixture.
- Place pie on a baking sheet and bake 15 minutes in the 425f oven until the pastry begins to brown.
- Reduce heat to 350Fbake for 25 minutes or until the potatoes are almost tender.
- Take the pie out of the oven and very carefully pour the whipping cream into the spaces between the lattice strips.
- Return pie to the oven 350f for a further 35 minutes until the pastry is golden and the cream is bubbly.
- Let stand 5 minutes.
- cut in wedges and serve.

CREAMY LAYERED POTATO PIE
Few ingredients but they combine for a rich layered potato dish that is a great accompaniment to any main course. I made this last night improvising with what I had on hand & the result was awesome. The trick is slicing the potatoes very thin using a mandolin.

- Preheat oven to 275 degrees.
- Butter bottom & sides of a 9" pan.
- Thinly slice potatoes in rounds using mandolin.
- One layer at a time, start layering pie working from outside ring to center, slightly overlapping potato slices.
- Season each layer with salt & pepper, chives, parmesan cheese & a sprinkling of small pieces of butter.
- Repeat layering, top layer should also have chives, salt & pepper, parmesan & butter.
- Pour cream or half & half over top of pie reaching up about 2/3 way up dish.
- Bake in oven for about 35 minutes or until bubbly & nicely browned & a knife goes through the potato layers with no resistance.

LAYERED CHOCOLATE-PEANUT BUTTER PIE
This is a new recipe that I made for my wife because she was could not find one she liked. Everyone who has tasted it loved it. I hope that I have documented enough of it for other people to try it.

Steps:
- Place chocolate chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
- Take 2/3 cup of the chocolate and place between wax or parchment paper. Roll it very thin until it is the size of a 9-inch pie; cool for 2 minutes in the refrigerator (it should still be flexible). Take off one side of paper and press into the pie crust. Cool further in the refrigerator, about 10 minutes; remove the other side of the parchment/wax paper.
- Whip cream cheese, sugar, and vanilla extract together in a bowl; split into 2. Take the first mixture and add peanut butter and 1 cup whipped topping. Place this into the prepared pie crust and cool in the freezer until set, about 1 hour.
- Add 2/3 cup of the chocolate mixture and 1 cup whipped topping to the second cream cheese mixture. Place this into the prepared pie crust and cool in the freezer until set, about 1 hour.
- Take another 2/3 cup chocolate mixture and place in wax or parchment paper. Roll it thin until it is the size of the pie. Cool for 2 minutes, until solid but flexible. Remove 1 side of the parchment paper and place this over. Shape and place it back into the freezer until firm, about 30 minutes. Remove the other paper.
- Top with the remaining whipped topping. Add a little water to any remaining chocolate mixture until you can drizzle it onto the pie; drizzle and serve.
