This is a great recipe my mom got from my aunt. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. We just 'gobble' it up! If pecans aren't your favorite. substitute walnuts. Originally submitted to ThanksgivingRecipe.com.

Number Of Ingredients 6

1 (6 ounce) package lime flavored Jell-O® mix
1 ½ cups boiling water
1 (8 ounce) package cream cheese
1 (20 ounce) can crushed pineapple with juice
2 cups heavy whipping cream
1 cup chopped pecans

Steps:

  • Pour 1 cup boiling water over the gelatin mix in a large bowl. Stir it until it is dissolved. Add 1/2 cup pineapple juice. Place it in the refrigerator to partially gel. It is important that the gelatin is only partially gelled.
  • Meanwhile, cook the pineapple in a small saucepan until it boils. Let it cook about 5 minutes. Cool it to room temperature.
  • When the gelatin is partially gelled, blend the softened cream cheese into it until it is creamy. Mix in the cooled, cooked pineapple.
  • Whip the cream until it is fluffy. Fold it into the gelatin-cream cheese mixture. Fold the nuts into the gelatin mixture. Pour it all into a pretty crystal bowl and place it in the refrigerator to completely gel.

Creamy Lime Gelatin Salad is made with lime jello, cream cheese, sour cream, marshmallows, pineapple, and pecans. It's totally retro and delicious too.

1 package lime flavored jello (3 ounces, not sugar-free)
1 1/2 cups boiling water
25 miniature marshmallows
3 ounces cream cheese (diced and at room temperature)
8 ounces sour cream
1 can crushed pineapple (3 ounces)
1/2 cup chopped pecans

Steps:

  • Stir together jello, water, marshmallows, and cream cheese in a large bowl.
  • Chill until it begins to set, about 30 to 45 minutes. Check in 10 minute intervals to make sure it does not get completely set.
  • Beat until combined. Note it will not get completely blended and will have tiny bits of cream cheese.
  • Stir in sour cream, pineapple, and pecans.
  • Pour into gelatin mold (optional).
  • Chill thoroughly until set, at least 3 hours
  • Serve cold. Keep refrigerated when not serving.

1 package (6 ounces) lime gelatin
1 cup boiling water
1 package (8 ounces) cream cheese, softened
1/2 teaspoon vanilla extract
1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1 cup lemon-lime soda
1/2 cup chopped pecans
1 carton (8 ounces) frozen whipped topping, thawed, divided

Steps:

  • Dissolve gelatin in water. In a bowl, beat cream cheese until fluffy. Stir in gelatin mixture and beat until smooth. Stir in vanilla, oranges, pineapple, soda and pecans. Chill until the mixture mounds slightly when dropped from a spoon. Fold in three-fourths of the whipped topping. Pour into a 13x9-in. dish. Refrigerate for 3-4 hours or until firm. Cut into squares; garnish with the remaining whipped topping.

I recall my grandmother making a lime gelatin salad when I was a child and went searching...and oh, boy did I ever find one! Even better than my grandmothers!! This is so rich and delicious -- I ate it for breakfast with the tiny bit of leftovers from the holiday meal!

1 c boiling water
1 pkg lime flavored gelatin (6 oz.)
1 can(s) crushed pineapple in juice (drain & reserve juice)
1 pkg cream cheese (8 oz.), softened
2 c heavy whipping cream
1 c chopped pecans

Steps:

  • 1. In a large bowl, pour 1 cup boiling water over gelatin mix. Stir until COMPLETELY dissolved then stir in 1/2 cup reserved pineapple juice. Refrigerate until thickened but not set, about 1 hour. Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat and cool to room temperature. With an electric hand mixer, blend softened cream cheese into lime gelatin mixture until smooth. Stir in cooled pineapple. In your stand mixer bowl, beat whipping cream until soft peaks form. Fold into gelatin/cream cheese/pineapple mixture, until combined. Fold in chopped pecans. Pour mixture into Jell-O mold (5-6 cup capacity) or a pretty glass serving or trifle bowl. Refrigerate for at least 4 hours or until set.

FROZEN CREAMY JELLO

One of our favorite summer side dishes - Creamy Frozen Jello!

Number Of Ingredients 5

1 (8 ounce) can crushed pineapple (do not drain)
1/2 cup sugar
1 (3 ounce) package lime jello (or orange jello)
1/2 pint whipping cream
1 cup sour cream

Steps:

  • In a saucepan, bring pineapple and sugar to full rolling boil on stove-top; remove from heat.
  • Stir in box of jello and let cool.
  • In a separate bowl, whip whipping cream (unflavored - don't worry about adding any sugar because this dish is sweet enough). Fold in sour cream to whipped cream, then add to jello mix and whip until it's completely mixed together.
  • Line bottom of 9 x 5" loaf pan with wax paper. Gently pour creamy jello mix into prepared pan.
  • Cover with aluminum foil and freeze for at least 4-6 hours (preferably overnight).
  • When ready to eat, remove from the freezer and let it sit for 5 minutes.
  • Slice in half lengthwise, and then into 3/4" slices.

3 ounces vanilla pudding mix
5 ounces lime jello
4 cups of water
1/2 of a 20 ounce can crushed pineapple, drained
1/2 cup coconut flakes
1 8 ounce container Cool Whip

Steps:

  • Bring 4 cups of water to a boil.
  • Remove from heat and quickly mix in the jello and pudding mix.
  • Pour into a glass dish and add pineapple evenly throughout. I have used various sizes of glass dishes, they all work.
  • Cover and place in the fridge for at least four hours.
  • Remove from fridge and move the jello to a large bowl - mash around until it's broken up.
  • Mix in Cool Whip and coconut flakes.
  • Keep refrigerated until ready to serve.

  • Mix cream cheese and cottage cheese in medium bowl until blended. Gently stir in COOL WHIP with whisk. Gradually add to gelatin, mixing well after each addition. Stir in nuts and cherries. Pour into 6-cup mold sprayed with cooking spray.
