This is a fresh, slightly tangy pasta salad with plenty of different flavors.

SALAD INGREDIENTS:
8 ounces salad macaroni or ditalini pasta
1 cup tiny broccoli florets
1/2 cup diced cucumber
1/2 cup finely diced red pepper
1/2 cup sliced black olives
1/4 cup very thinly sliced green onion
DRESSING INGREDIENTS:
1/2 cup mayonnaise
2 teaspoons white wine or plain vinegar
1/2 teaspoon kosher salt (adjust to taste)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sugar

Steps:

  • Cook the pasta according to the directions on the package, adding a generous tablespoon or so of kosher salt to the water as it cooks. Just before the noodles are done cooking, add the broccoli to the pot. Let the broccoli boil for about 30 seconds and then drain everything into a large colander. Rinse well with cold water.
  • Stir together the mayonnaise, vinegar, salt, pepper, and sugar in a large mixing bowl. Add the cooked pasta and broccoli to the bowl and stir well to coat. Add the cucumber, pepper, olives, and onions and stir again. Taste and adjust seasonings, if needed. Cover and refrigerate until ready to serve. Stir again just before serving. Enjoy!

This is my favorite tuna and pasta salad! You can use any type of pasta you like, but I prefer the shells. Cook time is chill time.

2 (6 ounce) cans tuna in water, drained and flaked
1 lb medium pasta shell
1 cup celery, chopped
1/2 cup onion, finely chopped
2 cups mayonnaise
1/2 tablespoon dried parsley
2 teaspoons lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dry mustard

Steps:

  • Cook pasta according to package. Rinse with cold water and drain well.
  • Meanwhile, combine tuna, celery, and onion in large bowl.
  • In smaller mixing bowl, combine mayo, parsley, lemon juice, salt, pepper, and dry mustard.
  • Add pasta to tuna mixture. Spoon mayo mixture over tuna and stir until well blended.
  • Refrigerate 3 hours or until chilled.

1 (8 ounce) package small seashell pasta
2 yellow squash, chopped
1 zucchini, chopped
½ cup chopped banana squash
1 (15 ounce) can kidney beans, drained and rinsed
½ (15 ounce) can canned corn
2 (5 ounce) cans tuna, drained
½ cup Italian-style salad dressing

Steps:

  • Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.
  • Place squash and zucchini in a medium saucepan with 2 cups of water. Bring to a boil and cook until tender, about 15 minutes. Drain and set aside.

6.7 oz Tuna in Olive Oil (1 jar, drained and flaked)

1 Avocado (very ripe )
1 Cup Plain Greek Yogurt
2 Tbsp Chopped Fresh Dill (plus more to garnish)

1 red capsicum / bell pepper (, finely diced)
2 green onions (, finely sliced)
2 carrots ((medium), shredded using standard box grater)

2 avocados ((small/medium), cut into bite size pieces (optional))
1 cup mayonnaise (, whole egg best (Hellmann's, Best Foods, S&W or other whole egg mayonnaise))

Steps:

  • Cook pasta: Bring a large pot of water to the boil. Add salt, then cook pasta per packet directions. Drain well, let cool.
