CHILI LIME SOUTHWESTERN CHICKEN SALAD
A Chili Lime Southwestern Chicken Salad with a low fat and CREAMY Cilantro Chili Lime Dressing that doubles as a marinade! Weight Watchers Smart Points: 10 per serve

Steps:
- Whisk marinade ingredients together to combine, or pulse in a magic bullet using a small cup OR a small food processor until blended (all except for the greek yogurt). Pour half the marinade into a shallow dish to marinade the chicken fillets for two hours if time allows. Refrigerate the reserved untouched marinade to use as the dressing.
- Heat about one teaspoon of oil in a grill pan or skillet over medium-high heat and grill chicken fillets on each side until golden, crispy and cooked through. (Grill in batches to prevent excess water being released.) Once chicken is cooked, set aside and allow to rest.
- Slice chicken into strips and prepare salad with leaves, tomatoes, avocado slices, black beans, corn and chicken.
- Prepare dressing with remaining marinade/dressing with the 1/4 cup greek yogurt; mix well to combine OR pulse in a small food processor or magic bullet small cup.
- Drizzle the creamy dressing over the salad; divide into 4 bowls and serve.

- In a covered jar, mix the lime juice, olive oil, salt, garlic, cilantro, chili powder, and cumin. Cover, and shake until well blended.
- Place the lettuce in a large bowl. Toss with the chicken, black beans, onion, and tomato. Just before serving, toss with the dressing mixture and Parmesan cheese. Serve with tortilla chips, either crushed over the top of the salad, or on the side.

- In large bowl, mix Salad ingredients.
- In blender, place olive oil, cilantro, garlic, lime juice and salt. Cover and blend on high speed until smooth. If necessary, stop blender and scrape down mixture. Transfer to small bowl; beat in yoghurt with whisk until smooth.
- Before serving, add dressing to salad mixture; toss until mixed well. Serve immediately, or refrigerate up to 1 hour before serving.

- In a large bowl, mix together lime juice, cumin, chili powder and sea salt. Add the chicken halves and toss to cover them with marinade. Place in the fridge and marinate for 20 minutes while you prep the rest of the ingredients (I recommend prepping the avocado once the chicken is cooked to avoid browning)
- Heat oil in a skillet over medium-high heat. Remove visible garlic pieces from the chicken (to avoid them burning) and brown 2-3 minutes on each side. Reduce heat and continue cooking for 6-7 minutes or until chicken is cooked through (no longer pink inside) but still tender.
- Place on a cutting board, allow to cool slightly and slice (I use a tong to hold the chicken while I cut it)
- Arrange all salad ingredients (except dressing and lime wedges) in a large salad bowl or two plates, top with chicken pieces and drizzle with avocado ranch. Serve with extra lime wedges and enjoy!
