This is a quick-and-easy recipe to make, and it's one of our favorite meals for cold winter nights.

1-1/2 pounds ground beef
1 large onion, chopped
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomatoes and green chilies
1 can (10 ounces) chili without beans
1 pound process cheese (Velveeta), cubed
Salt, pepper and garlic powder to taste
2 cups sour cream, divided

Steps:

  • In a Dutch oven or soup kettle, cook beef and onion over medium heat until meat is no longer pink; drain. Add the beans, tomatoes, chili, cheese and seasonings. Reduce heat to low; cook and stir until cheese is melted. Stir in 1 cup sour cream; heat through (do not boil). Garnish with remaining sour cream.

½ cup chopped onion
2 cloves garlic, minced
1 tablespoon ground cumin
1 teaspoon chili powder
1 (8 ounce) package cream cheese, softened
2 (14.5 ounce) cans beef broth
2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL®)
½ cup heavy cream
2 teaspoons salt, or to taste

Steps:

  • Combine ground beef with onion and garlic in a large soup pot over medium-high heat. Cook and stir until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add cumin and chili powder; cook 2 minutes more.
  • Drop cream cheese into the pot by bits and mash it into the beef with a big spoon until no white spots remain, 3 to 5 minutes. Stir in broth, diced tomatoes, heavy cream, and salt. Cook until heated through, about 10 minutes more.

3 cups beef broth
1/2 cup heavy cream
2 teaspoons salt (to taste)

Steps:

  • In a large soup pot, brown the ground beef with the onion and garlic; drain.
  • Add the spices and cook a couple minutes.
  • Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain.
  • Stir in remaining ingredients and heat through.

With the back of a wooden spoon, smash it into the meat until no bits of white remain. Add the Ro-tel, broth and heavy cream and mix well. Simmer for 30 minutes.

1 teaspoon salt, or to taste

Steps:

  • Heat a large soup pot over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot pot until beef is browned and crumbly and onion is translucent, 5 to 7 minutes. Drain and discard grease if necessary.
  • Stir in cumin and chili powder and cook for 2 to 3 minutes. Drop cream cheese pieces into the pot; mix well and cook until melted and no white chunks remain. Stir in beef broth, undrained diced tomatoes, green chiles, cream, and salt. Reduce heat to medium and cook until heated through, about 30 minutes, or longer if desired; do not allow to boil or curdling/separation may occur.

I was looking for a different way to use some hash browns that needed using. Saw a couple recipes...this is my take on it...because I had Simply Hash Browns Southwestern i decided on a mexican styled soup. I also think this could easily be made in the crockpot...I will try it next time and edit how it went. **Please also note that this is spicy! If you would like a less spicer soup I would recommend using diced tomatoes with green chilies and Taco seasoning packet that is regular not hot and spicy. Although this soup should cook at least 1 1/2 hours...the longer the better! This soup tastes even better the next day. I think it's good...what do you think? ;)

olive oil (for cooking)
1 large onion, chopped
1 teaspoon minced garlic
6 cups chicken broth
2 (20 ounce) bags simply southwest-style hash browns
8 ounces taco-seasoned cheddar cheese
1 (14 1/2 ounce) can cream of celery soup or 1 (14 1/2 ounce) can chicken soup, undiluted
1 (10 1/2 ounce) can Fiesta nacho cheese soup, undiluted
2 cups milk
1 (15 ounce) can diced tomatoes with jalapenos
2 (15 ounce) cans black beans, rinsed and drained
1 (15 ounce) can corn, rinsed and drained (or frozen thawed)
4 pinches cumin
3 -4 pinches dried chipotle powder
3 dashes Tabasco sauce
1 (1 1/4 ounce) packet hot taco seasoning mix (I use McCormick brand)
2 dashes Pickapeppa Sauce (optional)
black pepper

Steps:

  • In a large stockpot add small amount of olive oil, onion, garlic, pepper to taste and saute lightly.
  • Add Hash browns a cook for a few minutes, stirring so as not to brown too much.
  • Add Chicken broth and come to boil.
  • Turn down heat and add cheese, stirring until melted.
  • Add the rest of the ingredients and simmer at least 1 1/2 hours.
  • If the soup is too thick for your liking you can thin it out with either more chicken broth or milk. We like ours nice and thick!
  • Optional Toppings:.
  • Sour Cream.
  • Cheddar Cheese.
  • Diced Green Onions, chopped.
  • Tortilla Chips.
  • Black Olives, diced.
  • Dollop of Salsa.
