CREAMY SWISS STEAK
"When I was working, I'd put this Swiss steak in the slow cooker before I left for the day," recalls Gloria Carpenter of Bancroft, Michigan. A creamy mushroom sauce made with canned soup nicely flavors the tender round steak. "It's delicious and so simple to make."

- Heat a large cast iron skillet or grill over medium-high heat. Sear/grill steaks for 4-5 minutes each side until browned and cooked to desired doneness.
- Transfer steaks to a warm plate; set aside.
- Melt 2 tablespoons butter in the skillet (if using a skillet). Add shrimp to the skillet, season with salt and pepper and sear until just cooked and pink -- about 2 minutes. Transfer to a bowl; set aside.(For grill: grill seasoned shrimp while brushing with melted butter until done.)
- To the same skillet, add the remaining butter, add the garlic, sauté until fragrant (about one minute). (If grilling meats, you will need to grab a pan or skillet for this step.)
- Pour in the white wine (or broth), and allow to reduce to half, while scraping any bits off of the bottom of the pan.
- Reduce heat to low-medium heat, add the cream and bring to a simmer, while stirring occasionally. Add in the parmesan cheese; allow to melt through the simmering sauce. Season with salt and pepper to your taste.
- Add the shrimp back into the pan; sprinkle with the parsley, and stir through.

AL'S BAKED SWISS STEAK
This is a variation on another recipe, which is great as is, but I couldn't make Swiss steak without green peppers or garlic. I also season the meat instead of the flour; it gets a more intense taste that way.

CROCKPOT SWISS STEAK DINNER
My mother would make this when I was growing up but not in a crockpot. She has all her recipes in her head pretty much so I tried to duplicate it. I tweeked it a little, so don't tell her, and this is what I came up with. It was so darn good and all ready by the time I got home from work! Love my crockpot!

- Add one or two pieces of the steak to the bag. Shake, shake, and shake some more! It’s equally important to make sure that the cubed steak is evenly coated with flour so when you take the steak out of the bag, shake the meat to take off any excess flour.
- Melt a few tablespoons of butter in your slow cooker pan or fry pan. When the pan is hot add two or three pieces of the tenderized steak in a single layer. Definitely add little pats of butter around the steak when cooking to keep the pan from drying up.
