Succulent crawfish tails cooked in spices and a rich cream sauce then tossed with pasta. Crawfish Monica has become the most popular dish at the New Orleans Jazz Festival after being introduced in the early 1980s-a New Orleans classic in a short period of time.

1 pound rotini pasta
2 tablespoons olive oil
6 tablespoons Butter
1 medium yellow onion (chopped)
4 cloves garlic (chopped)
1 tablespoon Creole seasoning (plus some for the crawfish)
1/2 teaspoon cayenne (optional)
1/2 cup Dry White Wine
2 cups Heavy Cream
1 tablespoon fresh lemon juice
2 pounds Louisiana crawfish tails
1 bunch green onions (chopped)
1/2 cup parsley (chopped)
1 cup Parmesan cheese (grated and divided)

Steps:

  • Cook the pasta to al denté according to the package direction.
  • Reserve about 1/4 cup of the pasta cooking water. When the pasta is al dente, drain but don't rinse. Return the pasta to the pot, cover and set aside.
  • Place the crawfish tails in a bowl and sprinkle with Creole seasoning. Mix well and set aside.
  • In a large sauté pan, melt the butter over medium-high heat until frothy.
  • Add the yellow onions and saute until soft, about 8 minutes.
  • Add the garlic and continue to saute until aromatic, about 2 minutes.
  • Add the creole seasoning and cayenne (if using) and stir well. Saute another two or three minutes.
  • Add the wine, bring to a heavy simmer and allow the wine to evaporate almost completely.
  • Add the cream and lemon juice, stirring and shaking the pan until well blended.
  • Simmer on low for a couple of minutes until it begins to slightly thicken.
  • Add the crawfish tails a few at a time and stir well to blend completely.
  • Allow the crawfish tails to only warm through (about 3 minutes), then add the green onions and parsley.
  • Mix well and simmer about two minutes.
  • Add the reserved pasta water and a drizzle of olive oil to the cooked pasta and stir thoroughly.
  • Add the cooked pasta to the sauce a little at a time. Stir completely to combine the pasta, sauce and crawfish tails before adding more pasta. See Recipe Notes about how much pasta to add.
  • When the pasta has been thoroughly combined, stir in about 1/2 cup of the Parmesan cheese and mix well. Reserve the remaining parmesan cheese to add at the table.
  • Remove from the heat. When serving, sprinkle more parmesan cheese on top.

1 1/2 quarts heavy cream
3 tablespoons cajun seasoning
1 cup chopped green onion

Steps:

  • Heat butter in a deep skillet until bubbly hot.
  • Add seasoning and stir until well- blended.
  • Add heavy cream and cook until reduced by half.
  • Add green onions, cooled pasta and meat.
  • Heat through.
  • Serve immediately.

1 pound purple, red and white fingerling potatoes
1/2 cup Creole seasoning, plus more for serving, optional
10 thyme sprigs, separated
4 fresh bay leaves
2 heads garlic, tough outer skins removed and halved lengthwise
2 lemons, halved
1 bag crawfish, shrimp or crab boil seasonings, such as Zatarain¿s
1 yellow onion, peeled and quartered
1 pound andouille sausage, cut into 1-inch slices on the bias
2 ears yellow or white corn, cut into thirds
2 pounds live crawfish, rinsed
1 pound (26-30 count) Gulf white shrimp, peel on and deveined
Kosher salt

Steps:

  • Combine the potatoes, Creole seasoning, thyme, bay leaves, garlic, lemons, boil seasonings bag and onion with 6 quarts cold water in a 14-quart or larger pot with a colander insert. Cover and bring to a boil; reduce to a simmer and cook 10 minutes.
  • Add the andouille and corn to the pot. Cover and simmer an additional 15 minutes. Add the crawfish, cover again and cook 10 minutes. Add the shrimp and stir to combine. Cover and cook for 4 to 5 minutes more. Carefully strain the seafood, sausage and vegetables and serve on a large table covered with newspaper. Season with salt or additional Creole seasoning.

24 oz. half & half
4 green onions
1 med. yellow onion(chopped)
stick butter
1 # crawfish
1/2 c parmesan cheese
3/4 c mozzarella cheese (shredded)
3/4 bag rotini curly pasta
pinch of tarragon (optional)
2 tbsp. rosemary
1 tsp. ground thyme
2 tbsp. basil if not using tarragon (if using tarragon then 1 tbsp.)
2 tbsp. parsley
1 tbsp. minced garlic

Steps:

  • -Purify onion & saute in butter. -Add green onion saute another couple min. -Add cream & half & half. -Bring to a boil then add crawfish & seasonings, incl. minced garlic. -Bring to a boil again, then simmer for approx. 12 - 15 min. until slightly thickened. -Season to taste -Tony Chachere's & salt & pepper -Add parm. cheese -Add monzzarella cheese -Add cooked rotini & stir well. -Serve & enjoy!

1 pound linguine or fettucine
2 tablespoons olive oil
6 tablespoons unsalted butter
1 cup chopped yellow onions
2 tablespoons minced garlic
2 teaspoons Essence, recipe follows
1/2 teaspoon salt
1/4 teaspoon cayenne
1/4 cup dry white wine
2 cups heavy cream
1 tablespoon fresh lemon juice
1 pound crawfish tails*
1/2 cup chopped green onions
1/2 cup chopped fresh parsley leaves
1 cup grated Parmesan
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente, about 8 minutes. Drain, reserving 1/4 cup of the cooking liquid. Return to the pot and toss with the olive oil and reserved cooking liquid. Cover to keep warm. In a large saute pan or skillet, melt the butter over medium-high heat. Add the onions and cook, stirring, until soft, about 5 minutes. Add the garlic, Essence, salt, and cayenne, and cook, stirring, for 1 minute. Add the white wine and cook over high heat until nearly all evaporated. Add the cream lemon juice and cook, stirring occasionally, until slightly reduced. Add the crawfish tails and cook, stirring, to warm through. Add the onions and parsley and cook for 1 minute. Add the cooked pasta and toss to coat with the sauce. Cook until the pasta is warmed through, about 1 minute. Remove from the heat and add 1/2 cup of the cheese. Turn out into a serving bowl and top with the remaining 1/2 cup of cheese. Serve. *Crawfish tails can be purchased online and shipped through Cajun Grocer. Peeled medium shrimp can be substituted, but the cooking time must be increased to allow thorough cooking.
