CHEAP AND EASY MEXICAN CREPES
This is an easy delicious dinner I invented which all my four kids love (very rare to find something they will all eat!) It's cheap to make and tastes good too.

Steps:
- Crepes.
- Combine all ingredients together and beat til smooth with a whisk. Mixture should be runny.
- Heat a greased frypan on stove.
- Pour 2 or 3 tbsps mixture into pan and tip pan til a medium sized circle is covered with mixture. (makes a crepe about 20cm or 8inches across).
- Filling.
- Brown mince in saucepan.
- Add seasoning to taste.
- Add baked beans.
- Assembly.
- Place about 2 tblsps meat mixture across middle of crepe.
- Roll up and place in lasagna dish.
- Sprinkle with grated cheese.
- Brown under griller.
- Serve with salad or veges.

CORN AND CHEESE-STUFFED CREPES WITH POBLANO CREAM

- Grease a 13-by-9-by-2-inch glass baking dish with butter. Set aside.
- For the crepe batter: Place all ingredients in a blender and process until smooth. Let the batter stand for 30 minutes to allow any bubbles to settle.
- Preheat oven to 350 degrees F.
- For the sauce: Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add the onions and cook until translucent, about 4 minutes. Add the poblano chiles and cook for 1 minute to blend flavors. Add the heavy cream and bring to a boil. Reduce the heat to medium and simmer until reduced and the cream coats back of spoon, about 6 minutes. Cool mixture slightly then transfer to blender and process until smooth. Season the poblano sauce with salt and pepper, to taste. Return the sauce to the same skillet and keep warm over low heat until ready to serve.
- Heat a 10-inch-diameter non-stick skillet over medium-high heat. Brush the pan with oil (or spray with non-stick cooking spray). Add scant 1/4 cupful batter to the skillet; tilt to coat the bottom of the pan with an even layer of batter. Cook for about 30 to 45 seconds until golden on the bottom, adjusting the heat, as necessary, to prevent burning, Using a spatula, turn the crepe over and cook for 30 seconds. Transfer to a plate. Repeat with the remaining batter.
- Stuff each crepe with 1/4 cup of grated cheese and transfer to the prepared backing dish, fitting them snugly into dish. Cove the pan with foil and bake until cheese melts, about 15 minutes.
- To serve: Arrange the crepes on a platter and pout the sauce on top. Garnish with corn kernels, Mexican crema and chopped cilantro.
SIMPLE DELICIOUS CREPES
Crepes are very simple to make, and there isn't a lot of difference in different recipes. However, in this one I used real Mexican vanilla and brown sugar, and it made a wonderful, light, slightly sweet crepe that was perfect with fresh fruit fillings, or dessert fillings.

- Melt the butter in a glass dish in the microwave and let cool. You don't want it to curdle the eggs.
- Use a blender to make this easier.
- Toss in the four eggs and swirl a few times to lightly beat them.
- Add vanilla, butter (no margarine, it compromises the flavor) and milk and whirl a few times.
- Sift together salt and flour, and add to eggs and milk along with brown sugar.
- If you'd like, pour batter into a bowl and let sit in the refrigerator for an hour (or up to two days if you're not making them right away). This allows the batter to settle and removes the bubbles. I use this time to prep the fruit filling.
- Heat a crepe pan (I prefer the small ones so we can have more than one kind of crepe) over med heat.
- Spray with Pam or swirl a VERY small amount of butter in the pan. Heat pan. Add about 2 Tbs (I use a small ladle) of batter and swirl to coat the pan until it stops swirling. Put over heat and cook until the edges start to brown slightly. You can turn them if you'd like, or simply turn out onto a plate.
- Can be kept up to a week in the fridge or two months in the freezer. They freeze very well!
- You could omit the vanilla and sugar and make savory crepes.
SAVORY BEEF FILLING FOR CREPES
Most recipes for crepes are generally the same, tweaked for personal tastes so I will leave out the crepes recipe for now. The beef sauce is a recipe that I've developed loosely from beef stroganoff, made with beef stew meat, potatoes, green onions, and any veggies you choose (I prefer carrots and/or broccoli.) The result of this recipe is a creamy, savory dinner that'll leave you wanting more. Serve sauce inside or on top of crepes.

- Heat oil in a saucepan over medium-high heat. Add beef and season with salt and pepper. Cook and stir until it starts to brown, 4 to 5 minutes. Toss in potato, carrots, and green onions, then pour in milk. Reduce heat to medium and bring to a simmer.
- Mix 1/2 cup water with bouillon granules. Mix remaining water with flour, whisking until well combined. Add both mixtures to the saucepan and stir to combine. Stir in wine, Worcestershire sauce, garlic powder, onion powder, cilantro, and rosemary. Cook, stirring every couple of minutes, until the vegetables begin to soften, about 10 minutes.
- Add broccoli and reduce heat to medium-low. Simmer until all vegetables and beef are tender, 10 to 15 more minutes.
- Serve sauce inside or on top of crepes.

HOT MEXICAN BEAN CREPES
A spicy crepe that is hot and tasty for a satisfying dinner meal.

Steps:
- Combine flour, milk, water, eggs, and melted butter in a large bowl; beat with a wire whisk until crepe batter is free of lumps.
- Heat a nonstick skillet over medium heat. Pour 1/4 cup of batter into the skillet; cook until bubbles form on the surface, 2 to 3 minutes. Flip and cook crepe for 1 minute on the second side. Transfer to a plate. Repeat with remaining crepe batter.
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Pour pinto beans into a small saucepan over medium heat; cook until heated through, about 5 minutes. Remove from heat and let cool slightly. Mash into a fine puree using a potato masher.
- Combine salsa, tomatoes, corn, ginger, and chili powder in a large bowl. Mix in pureed beans. Spoon some of the bean mixture into the center of each crepe. Roll up crepes, tucking ends in neatly.
- Place filled crepes seam-side down on the lined baking sheet. Sprinkle grated Monterey Jack cheese on top.
- Bake in the preheated oven until cheese is melted, about 10 minutes.

CREPES WITH MEXICAN FILLING

- 1. Crumble meat into skillet. Brown over medium heat. Pour off excess fat. Blend in taco seasoning mix. Cool. 2. Prepare the crepes. Divide meat filling into center of each crepe and roll up. Place filled crepes in lightly oiled baking dish. Sprinkle with 1/4 cup of the cheddar cheese. 3. Bake at 375 degrees for 15 to 20 minutes or until heated through and cheese is melted. 4. Top with sour cream and remaining cheese. Sprinkle with the chopped avocado. Garnish with tomato slices. Good served with: Tossed green salad. Recipe may be halved or doubled. Crepes: 1. Combine all-purpose flour and salt. 2. Pour 1 cup each milk and water into blender container. Add 4 eggs. Blend. 3. Add the flour mixture and 4 tablespoons melted butter. Blend for about 1 minute. 4. Cover and refrigerate at least 1 hour. Use lightly oiled crepe pan to make 12 crepes. TIPS: The crepes are easier to roll if made ahead of time and refrigerated for about 2 hours. Freeze leftover crepes.
