BANANA COOKIES

Steps:

• Heat the oven to 190C/170C fan/gas 5 and line two baking sheets with baking parchment.
• Heat the butter in a small pan on the hob, or in a heatproof bowl in a microwave on high in 30-second bursts, until melted. Tip the butter into a mixing bowl if melted on the hob.
• Stir the sugar into the melted butter with a wooden spoon, then beat in the egg until smooth. Stir in the mashed banana. Sift the flour, bicarbonate of soda, cinnamon and a pinch of salt into the bowl and mix until it forms a soft dough. Add the raisins, chocolate chips or nuts, if using, and stir well until evenly distributed.
• Use a teaspoon to drop small scoops of the mixture onto the prepared trays, spacing them well apart as they'll spread. It should make about 24 cookies. Bake for 10-12 mins until they are light brown on the edges and feel dry to the touch.
• Leave on the tray for a couple of minutes to set, then lift onto a cooling rack to cool completely. Will keep in an airtight container for up to three days.

CRISPY BANANA COOKIES

Steps:

• Preheat the oven to 350 degrees F (175 degrees C). Grease 3 cookie sheets well.
• Cream sugar and butter together in a medium bowl using an electric mixer until light and smooth. Mix in molasses, egg, and vanilla extract on high speed.
• Sift flour, baking powder, cinnamon, ginger, and nutmeg together in a separate bowl. Stir gradually into molasses mixture. Stir in sun-dried bananas using a wooden spoon.
• Shape dough into walnut-sized balls and place onto the prepared cookie sheets. Flatten slightly using a fork.
• Bake in the preheated oven until edges are set and golden, 10 to 12 minutes. Remove from the oven and let cool for 2 minutes before transferring to a wire rack to cool completely.

BANANA OATMEAL COOKIES WITH BANANA FROSTING

Steps:

• Heat oven to 350°F.
• Grease baking sheet; set aside.
• Cream 3/4 cup Crisco and brown sugar in large bowl at medium speed until well blended.
• Beat in egg.
• Add one cup mashed banana.
• Mix until creamy.
• Combine oats, flour, salt, cinnamon, baking soda and nutmeg.
• Stir into creamed mixture.
• Mix in one half cup nuts.
• Drop 2 level measuring tablespoonfuls of dough into a mound to form each cookie.
• Place 2 inches apart on baking sheet.
• Bake for 15-17 minutes.
• Cool one minute on baking sheet.
• Remove to cooling rack.
• Cool Completely.
• For Frosting: Cream 2 tablespoons Crisco, 1/4 cup mashed bananas and lemon juice.
• Add confectioners sugar.
• Beat until smooth.
• Frost cooled cookies.
• Sprinkle with chopped walnuts if desired.

FROSTED BANANA COOKIES RECIPE

Steps:

• Heat oven to 350 degrees.
• Cream sugar, butter, shortening, and vanilla until light and fluffy.
• Add bananas and then mix in the eggs.
• Blend in buttermilk. Add the dry ingredients until just combined. Do not over-beat. It will be a sticky batter. Drop by tablespoons onto a greased cookie sheet.
• Bake for 9-10 minutes, until slightly golden.
• Cool completely.
• Mix all ingredients together and spread over cooled cookies.

CRISCO COOKIES

Steps:

• Cream Crisco and sugar together; add egg.
• Sift soda, cream of tartar and flour together.
• Add vanilla.
• Form into balls the size of walnuts.
• Roll in sugar; place on cookie sheet. Press down with thumb.
• Bake at 350° for 12-15 minutes.
