1 ½ cups quick cooking oats
½ cup unbleached all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
½ cup brown sugar
¼ cup margarine, softened
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9x9 inch baking pan.
  • In a large bowl, stir together oats, flour, baking powder, cinnamon and salt. In a separate bowl, cream together brown sugar and margarine. Beat in egg. Stir mixtures together just until blended. Pour batter into prepared pan.
  • Bake in preheated oven for 30 minutes, until a toothpick inserted into center of pan comes out clean.

Berry Crisp Spiral Ham Recipe - (4/5) image

1 8-lb. cooked spiral-sliced ham, liquid reserved
1 cup orange juice
1/2 cup seedless raspberry jam
1 cup fresh raspberries
1/2 cup honey
1 jalapeno chile pepper, stemmed, thinly sliced, and seeded, if desired

Steps:

  • 1. Preheat oven to 325F. Place ham, slices up, on a rack in a shallow roasting pan. Set aside. For berry glaze, in a medium saucepan combine reserved ham liquid, orange juice, jam, berries, honey, and jalapeno. Bring to boiling. Reduce heat. Simmer, uncovered, 15 minutes or until syrupy, stirring occasionally. Brush some of the glaze over ham. 2. Cover ham loosely with foil. Bake 1 hour and 20 minutes or until heated through, brushing occasionally with glaze. 3. Increase oven temperature to 425F. Remove foil from ham. Spoon remaining glaze over top and sides. Bake 10 minutes more or until top of ham is crispy and inner ham is heated through (140F). Remove; let stand 10 minutes before serving. Serve with additional raspberries.

2 pounds boiling potatoes, peeled and cut into 1 1/2-inch pieces
2 tablespoons unsalted butter
1 tablespoon olive oil
1 cup chopped cooked ham (5 ounces)
3 scallions, chopped

Steps:

  • Cover potatoes with cold water in a 3-to 4-quart saucepan and add 1/2 teaspoon salt. Simmer until tender, about 15 minutes.
  • Meanwhile, melt butter with oil in a heavy medium skillet over medium-high heat, then cook ham, stirring occasionally, until browned, about 5 minutes. Stir in scallions and 1/4 teaspoon pepper and cook 2 minutes.
  • Reserve 1 cup potato-cooking liquid, then drain potatoes and mash. Stir in ham mixture along with enough cooking liquid to reach desired consistency. Season with salt and pepper.
