BETTER-THAN-BAKERY NO-KNEAD SOURDOUGH
This crusty, chewy, tangy bread can't be beat. You'll be shocked at how simple it is to create such a professional loaf at home. Glossy, crunchy crust. Resilient, airy crumb. Baking inside a Dutch oven (set in your kitchen oven) does an excellent job simulating the effects of a professional bread oven.

Steps:
- Mix water and salt together in a very large bowl. Add sourdough starter and whisk vigorously to mix and aerate; stir in 3 cups bread flour until smooth. Stir in remaining 3 cups bread flour until dough is completely mixed.
- Cover bowl and set aside until dough is bubbly and increased in volume, 12 to 15 hours.
- Turn dough on to a well floured work surface using floured hands. Turn dough several times to cover with flour. Return dough to an oiled bowl and let rest until dough is doubled in size but not risen enough to collapse, 2 to 3 hours.
- Preheat an oven-safe, lidded Dutch oven (at least 8 quarts) in a 450 degrees F (230 degrees C) oven for 30 minutes.
- Carefully remove Dutch oven using oven mitts and sprinkle cornmeal into the bottom to prevent dough from sticking.
- Gently roll dough out of oiled bowl and into the Dutch oven; replace lid.
- Bake in the oven for 30 minutes. Remove lid and continue baking until crust is lightly browned, about 15 minutes more. Carefully tip loaf out onto a cooking rack to cool completely.

LONG-FERMENTATION SOURDOUGH BREAD
Tangy and soft, this sourdough bread is one of the most basic recipes you can make. This recipe makes one loaf, but feel free to multiply the ingredient ratios for a larger batch. You won't be disappointed!

Steps:
- Combine 2 cups flour, water, sourdough starter, butter, sugar, and salt in a bowl. Mix into a stiff batter. Beat for a few minutes using a wooden spoon or an electric mixer; the dough should be quite moist and sticky.
- Turn dough into an oiled bowl, flipping to coat all sides. Cover the bowl with a clean towel and leave at room temperature to ferment 8 hours to overnight.
- Turn dough onto a liberally floured surface. Knead for at least 10 minutes, adding an additional 1/2 cup flour or more as needed; the dough should be very smooth and elastic when done.
- Butter a loaf pan. Shape dough into a loaf and place in the prepared pan. Cover with a clean towel and let rise in a warm place until doubled in bulk, 4 to 12 hours depending on temperature.
- Preheat the oven to 350 degrees F (175 degrees C).
- Brush the top of the loaf with beaten egg. Cut a 1/4-inch slash down the center lengthwise using a sharp knife.
- Bake in the preheated oven until an internal temperature of at least 180 degrees F (82 degrees C) is reached, 25 to 30 minutes.
- Turn loaf out onto a rack and cool completely before slicing.

- 12 hours before you plan to mix the dough, add the ingredients to make ½ cup (100 g) of active sourdough starter to a clean jar. Stir until combined, loosely cover the jar and let the starter rise at room temperature. (The ingredients will create a total of 115 g active starter but, because some of it will stick to the sides of the jar during the transfer, we are making a little more than needed.) The sourdough starter is ready to use when it has doubled in size and there are plenty of bubbles on the surface and sides of the jar.
- Mix Dough Ingredients: Add the ingredients to a large mixing bowl. Use your hands to combine the ingredients until there are no dry bits and the dough looks like a shaggy mass. Cover the bowl and let the dough rest on the counter for 1 hour.

- In a large mixing bowl, combine water and sourdough starter, using your hand to dissolve the stater into the water. Add the flour and salt. Use a danish dough whisk or your clean hands to mix the dough. Pinch the shaggy dough to incorporate all of the flour. Scrape the bowl as you go. The dough will be very shaggy. If it feels really dry, add another tablespoon or two of water, and keep pinching and mixing until no dry patches of flour remain. Cover the bowl with a clean kitchen towel, and let rest for 20 minutes.
- Do 1 stretch and fold rotation around the dough. Lift up one side of dough, and stretch it up gently, then lay it over the ball of dough. Continue lifting sides of the dough, until you've worked your way around the entire ball of dough. Use you hand to scoop up the dough ball, and flip it over. Cover with a kitchen towel, and let rest for another 20 minutes.
- Repeat the stretch and fold process all the way around the perimeter of the dough, then flip the dough over. Cover with plastic wrap, or a dough cover, and let bulk ferment (rise) at room temperature for 12-18 hours, or until the dough has doubled in size.
- Flour a proofing basket really well. Or, you could line a medium size mixing bowl with a clean kitchen towel, and thorough cover the inside of it with flour. Pour the dough out onto a well floured work surface. Do a quick preshape by bringing all 4 corners of the dough into the middle, overlapping. Flip it over and let it sit on your floured board for about 10 minutes. Now for the final shape: flour your work surface again. Flip the dough over, and begin bringing the sides in towards the center, then roll the dough up, until a nice tight boule is formed. For more tension, you gently drag the dough towards you on the board. Pinch the bottom shut, and place SEAM SIDE UP in the prepared proofing basket. Sprinkle the top with flour, and cover with a kitchen towel. Let the dough rise at room temperature for 2-3 hours until it puffy, jiggy, and has almost doubled in size.
