Crispy Baked Buffalo Cauliflower Wings image

These extra crispy baked buffalo cauliflower wings are the ultimate veggie dish with a little kick! They are vegan, paleo and whole30 and they are so flavorful and simple to make!

1 large head of cauliflower or 2 small heads
1 cup almond flour
1/4 cup tapioca flour or arrowroot flour
2 teaspoons garlic powder
1 teaspoons onion powder
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 cup non-dairy milk of choice (unsweetened!)
1/2 cup mild or hot buffalo sauce
For serving: scallions or your favorite dressing (I used ranch!)

Steps:

  • Preheat oven to 450 degrees and line a baking sheet with parchment paper and set aside.
  • Wash your cauliflower and break it into small florets.
  • In a medium bowl mix together the flours, onion powder, garlic powder, black pepper, paprika, and salt.
  • Add the non-dairy milk and give it a good mix so there are no clumps remaining
  • Add all of the cauliflower to a very large bowl then pour the mixture eon top of it and mix so each piece is evenly coated (or you can individually dip each piece if you don't have a large bowl
  • Add the cauliflower to baking sheet and spread them apart
  • Bake for 20 minutes in oven then remove
  • Pour your buffalo sauce into a bowl, then dip each cauliflower floret into the buffalo sauce, and space them out on the baking sheet
  • Bake for another 20 minutes or so until golden!

This is a great substitution for buffalo wings! Can be made gluten-free, vegan, or vegetarian. Make sure to coat your cookie sheet well with oil or they will stick. Husband and kids give this two thumbs up! Dip this in ranch or blue cheese for even more added flavor, but it doesn't need it.

olive oil cooking spray
¾ cup gluten-free baking flour (such as Premium Gold® Flax and Ancient Grains All-Purpose Flour)
1 cup water
½ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
2 heads cauliflower, cut into bite-size pieces
2 tablespoons butter
½ cup hot pepper sauce (such as Frank's RedHot®)
1 teaspoon honey

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet with cooking spray.
  • Mix flour, water, garlic powder, salt, and pepper together in a bowl using a whisk until batter is smooth and somewhat runny. Add cauliflower to batter and mix until cauliflower is coated; spread onto the baking sheet.
  • Bake in the preheated oven until lightly browned, 20 to 25 minutes.
  • Melt butter in a saucepan over medium heat. Remove saucepan from heat and stir hot pepper sauce and honey into butter until smooth. Brush hot sauce mixture over each cauliflower piece, repeating brushing until all the hot sauce mixture is used.
  • Bake in the oven until cauliflower is browned, about 10 minutes. Remove baking sheet from oven and allow the cauliflower to cool 10 to 15 minutes.

  • Grab three big bowls. In the first bowl, add the flour. In the second bowl, mix together the chia and water. For the third bowl, add the corn flakes, garlic powder, smoked paprika, salt, and pepper to a food processor. Pulse several times until broken down, but there is still some texture. Pour the corn flake mixture into the last bowl.
  • Rinse your cauliflower florets so they are wet. Take a handful at a time and drop them in the flour and toss to coat. Next drop them in the chia mixture and toss to coat. Finally, toss them in the corn flake mixture. Spread them out on the parchment paper lined baking sheet so that they aren't touching. Repeat with all of the florets until you have used up all of your ingredients.
