CRISPY BAKED CHICKEN WINGS

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
- For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
- Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.
AWESOME CRISPY BAKED CHICKEN WINGS
Incredibly tasty variation of baked chicken wings with no marinade - just butter, garlic, and herbs. Great for the low-carb eater!

- Preheat oven to 350 degrees F (175 degrees C). Line a shallow baking dish with aluminum foil and grease lightly.
- Cut tips from chicken wings and discard. Cut between the joint to separate each wing into 2 pieces.
- Combine butter and garlic in a small saucepan over low heat; heat until butter is melted and garlic is fragrant, 3 to 5 minutes.
- Mix Parmesan cheese, parsley, oregano, paprika, salt, and pepper together in a shallow bowl.
- Dip chicken wing pieces in melted butter mixture; coat with Parmesan cheese mixture in the bowl. Arrange in the prepared baking dish. Drizzle any remaining butter on top.
- Bake in the preheated oven until skin is browned and juices run clear, about 1 hour.

CRISPY BAKED CHICKEN WINGS
Crispy and flavorful baked chicken wings are so easy to prepare and you don't have to bother with all the grease from frying!

- Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.
- Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.
- Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!
- Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.
- Arrange wings, skin side up, in single layer on prepared wire rack.
- Bake on the upper middle oven rack, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour.
- Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.

CRISPY BREADED AND BAKED CHICKEN WINGS
I like my wings baked and not fried. These are very tasty and crispy. For easier cleanup, line pan with foil and spray with nonstick spray.

- In a large resealable plastic bag, combine the bread crumbs, onion powder, basil, garlic salt and paprika.
- In a small bowl, whisk egg and water.
- Cut chicken wings into three sections and discard wing tips.
- Dip wings in egg, then place in bag and shake to coat.
- Place on a greased 15 x 10" baking pan.
- Bake at 425° for 30-35 minutes or
- until juices run clear, turning once.
CRISPY BAKED CHICKEN WINGS RECIPE
Baseball has hot dogs, and football calls for hot wings. Instead of the Buffalo-sauce route, these take a sticky-sweet Southern turn with a pepper jelly glaze. Even though these wings are oven-fried, you'd never know it. I learned about this baking powder trick for making crispy, you'd-swear-they-were-fried chicken wings a few years ago from various sites, most notably Serious Eats. Those versions ask you to dry-brine the chicken overnight and/or cook it on a rack. I didn't do either of those things, hoping for a faster way with less cleanup, and the results were fantastic. Just be sure you reach for baking powder, not baking soda; the latter will give the chicken a strong metallic flavor. Serve up a pile of these wings on game day and you'll have a very happy crowd. They're dreamy with the hearty crunch of kettle chips, carrots, and celery-all ready to take a dive in creamy blue cheese dressing.

- Preheat oven to 450°F. Pat chicken very dry with paper towels; place in a large bowl. Stir together salt, baking powder, coriander, and ginger in a small bowl. Sprinkle spice mixture over chicken; toss well to coat. Arrange chicken, fatty side down, in a single layer on a rimmed baking sheet lined with parchment paper (or lined with aluminum foil and then parchment paper if you don't want to wash the baking sheet).
- Bake in preheated oven 25 minutes. Turn chicken over; bake until well browned and crispy, 17 to 20 minutes. Remove baking sheet from oven. Drain chicken on paper towels; let stand 5 minutes.
- Stir together jelly and vinegar in a large skillet; bring to a boil over high. Cook, stirring occasionally, until jelly melts, about 2 minutes. Add butter, and stir until butter melts, 30 seconds. Add chicken; toss well to coat, and remove from heat.
SIMPLE BOIL AND BAKE CRISPY CHICKEN WINGS
This is more of a method than a recipe, but this is how I always make wings now. I find boiling them first helps get rid of more of the fat, and they get crispier in the oven.

- Boil wings in a large pot of water for about 15 minutes.
- Broil wings in oven for about 5-10 minutes per side depending on how your oven works) until nicely browned and crisp.
- I put the bbq sauce in the bottom of a big metal bowl and keep it on the stove near the oven vent so that is warms up a bit.
- Remove the wings from the oven and pat with paper towels to remove more grease if necessary (I bake mine on parchment paper, so that absorbs some of the grease for me).
- Toss wings in bowl with bbq sauce (or any sauce you want) until well covered.
