Cooking spray
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan
1/2 teaspoon onion powder
1/4 teaspoon cayenne
Kosher salt
2 large eggs
1 tablespoon milk
8 ounces green beans, trimmed
1 cup all-purpose flour

Steps:

  • Preheat the oven to 425 degrees F.
  • Spray a large baking pan with cooking spray.
  • Mix the panko, Parmesan, onion powder, cayenne and 1/2 teaspoon salt together in a wide, shallow bowl. Whisk the eggs and milk together in another shallow bowl.
  • Toss the green beans in the flour. Working a few green beans at a time, shake off the excess flour and dip in the egg. Let the excess egg drip off and then toss in the panko, patting firmly so the crumbs adhere. Arrange the breaded green beans in a single layer in the prepared baking pan and spray thoroughly with cooking spray.
  • Bake until golden brown and crisp-tender, about 10 minutes.

1 tablespoon ranch dressing mix
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/4 teaspoon salt
1/2 teaspoon pepper
Olive oil spray
2 eggs, beaten
1 pound fresh green beans, washed and trimmed

Steps:

  • Preheat oven to 425°F (218°C). Combine the breadcrumbs, ranch mix, garlic powder, onion powder, paprika, salt and pepper in a medium bowl. Lightly spray a baking sheet with the olive oil spray. Dip the green beans in the egg, then in the breadcrumb mixture to coat. Place on the baking sheet in a single layer. When all green beans are coated, spray them lightly with the olive oil spray and place the baking sheet in the oven. Bake for 10 minutes, then flip them and bake for another 2 to 5 minutes until crispy. If needed, turn on the broiler for a minute or two to get them really crispy (just be careful not to burn them!).
