VEGAN BLACKENED GRILLED TOFU
Steps:
- Gather the ingredients.
- Slice the pressed tofu block into 4 pieces of about 1-inch thickness each.
- Place soy sauce in a shallow dish and add the tofu. Marinate, covered and refrigerated for at least 30 minutes, turning once or twice to marinate evenly.
- Gather the blackening seasoning ingredients.
- In a small bowl, combine the paprika, pepper, garlic powder, onion powder, cayenne pepper, oregano, and thyme. Mix well.
- Prepare a medium (350 F to 375 F) gas or charcoal grill fire. Oil the grill grates to create a nonstick surface. Remove the tofu from the soy marinade and dip each piece into the blackened seasoning spice mixture, making sure the tofu is generously coated on both sides.
- Grill the tofu until it has blackened on both sides, about 8 to 10 minutes total.

Steps:
- Preheat a nonstick skillet over medium heat.
- Slice the tofu through the center so that you create two separate slabs. Then, cut each of those slabs in half to make 4 steaks. I cut them into triangles, but do as you prefer.
- Place the tofu in a dish with a flat bottom. Then, pour in the soy sauce and let the tofu marinate for at least 15 minutes.
- Add the blackened seasoning spice onto a plate or dish with a flat bottom. Press the tofu into the spices and rotate until all sides are covered fairly well.
- Cook in a hot nonstick skillet for 3-5 minutes per side. I love using cast iron for this recipe.

Steps:
- Drain tofu, and slice into strips. Place in a plastic bag or container, and freeze overnight. This will give the tofu a meatier texture. Thaw tofu strips, and blot with paper towels to dry.
- Heat olive oil in a large skillet over medium heat. In a small bowl, whisk together the egg white and 1 tablespoon of barbeque sauce. Combine the flour, salt, and pepper in a separate bowl. Dip the tofu slices into the egg mixture, then into the flour mixture, shaking off excess flour. Fry in the hot oil for about 1 minute on each side, until golden brown. Just fry enough at one time so they are not crowded. Remove from the oil to paper towels to drain and cool.
- Preheat the oven's broiler. Brush tofu slices with additional barbeque sauce, and allow to marinate while the broiler heats up. Arrange them on a broiler pan, or wire rack set over a cookie sheet for best results.
- Position the oven rack about 6 inches from the heat source. Broil for 5 minutes on each side, or until browned and crisp, watching closely so as not to burn them. Serve warm with the remaining barbeque sauce for dipping.

Steps:
- Drain tofu and cut cube in half lengthwise. Then press both halves by placing between 2 weighted cookie sheets lined with paper towels. Allow to sit for at least 30 minutes so that excess moisture is drawn out. Replace paper towels with dry ones as they become soaked.
- Next preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Dice tofu into 1" cubes and transfer them to the baking sheet. Bake for 10 minutes each side until it is light golden brown. Set tofu aside to cool.
- Combine cole slaw with vinegar and a sprinkle of salt. Set aside to marinate for 20-30 minutes.
- Mix together the spices (paprika to cornstarch) in a medium bowl. Mix cooled tofu pieces with spices until evenly coated.
- Warm olive oil in large skillet over medium heat. Saute the tofu about 5 minutes per side.
- Make avocado crema by placing pitted avocados, lime juice, cilantro leaves and garlic cloves in food processor or blender and mixing until smooth.
- Warm tortillas in microwave. Place tofu in each tortilla first, top with cole slaw and avocado crema.
