CRISPY FAUX-FRIED MEXICAN CHICKEN
I love faux frying foods using panko. This crunchy, spicy chicken would be great on a taco salad.

Steps:
- Preheat the oven to 375 degrees.
- Combine the panko, taco seasoning and salt in a shallow dish.
- Remove any fat from the chicken breasts. Pull the tenderloin away from the breast; it is on the under side of the breast. Slice the remaining breast into one inch strips. You should get 4 strips from each breast. Spray each strip with nonstick cooking spray, then dip into the bread crumbs to coat the entire surface. Transfer the chicken to a baking sheet. Bake for 20 minutes or until the meat reaches 165 degrees. Serve with salsa.
- Each serving: 3 ounces chicken and 1/4 cup salsa

CRISPY FRIED CHICKEN
I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

- Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
- Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
- Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
- Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

Great with Mexican rice and fried beans with cheese melted on top, if desired! Sort of 'On-The-Border Southern Fried Chicken'.

Steps:
- In a resealable plastic bag combine the chicken, buttermilk and 1 packet of taco seasoning. Seal and shake to mix together. Refrigerate and let marinate overnight.
- In a large skillet, heat the olive oil over medium low heat. Mix flour and the other packet of taco seasoning in a shallow dish or plate. Remove chicken from refrigerator and remove chicken from marinade. Discard marinade.
- Coat chicken with flour mixture and fry in skillet until cooked through and juices run clear, 15 to 20 minutes.

My wife ran an daycare in our home. This is ome of the kid meals they gave us to help with meal planning. The servings are kid size, but it should be easy to ramp it up to adult portions if needed.

- In a shallow non-aluminum pan combine vegetable juice and hot sauce.
- Add chicken and let marinade in refrigerator for 3 hours turning frequently.
- Drain chicken and discard marinade.
- Preheat oven to 375 deg. F.
- Spray a large cookie sheet with non stick cooking spray.
- In a large zip bag combine remaining ingredients.
- Add the chicken and shake to coat.
- Remove from bag and place on cookie sheet.
- Sprinkle and remaining crumbs on chicken.
- Bake one hour until tender.
FAUX FRIED CHICKEN
This recipe comes from the "Crazyplates" cookbook by Janet and Greta Podleski. Baked chicken that tastes like fried- fabulous! I don't use buttermilk often, so I keep a can of Saco cultured Buttermilk Blend in the frige to mix up small amounts when needed. I found it in the baking aisle.

- Preheat oven to 425 degrees.
- Spray a large roasting pan with non-stick spray and set aside.
- In a shallow bowl or pie plate, combine flour, oregano, thyme, paprika, salt, garlic powder, and pepper.
- In a separate bowl or pie plate, combine cornflake crumbs and Parmesan cheese.
- Pour buttermilk into a separate bowl or pie plate.
- Rinse chicken and pat dry.
- Working a piece at a time, dip chicken pieces in buttermilk and moisten all sides.
- Place chicken in bowl with flour mixture and turn to coat.
- Dip in buttermilk again, then coat with cornflake mixture.
- Arrange chicken in roasting pan, leaving some space between pieces. This process can get quite messy, but hang in there.
- Bake, uncovered, at 425 degrees for 40 minutes, until chicken is no longer pink and juices run clear.
- Serve immediately.
