Recipe video above. A fantastic quick and easy chicken thigh recipe! You'll love the terrific garlic flavour in this - seared on the crust and in the sauce. The trick to crispy skinless chicken thighs is to cook longer on a lower heat.

700 g / 1.2 lb skinless boneless chicken thighs ((5 to 6))
1 tsp garlic powder
Salt and pepper
1 tbsp olive oil
1/2 cup / 125 ml dry white wine ((or broth or water))
25 g / 2 tbsp unsalted butter
2 large garlic cloves (, minced)
Finely chopped parsley (, optional)

Steps:

  • Sprinkle both sides of chicken with garlic powder, salt and pepper.
  • Heat oil in a large skillet over medium heat. Place chicken in skillet smooth side down.
  • Press down lightly with with spatula. Cook for 5 minutes until deep golden and crispy.
  • Turn and press lightly with spatula. Cook for 2 minutes. Add garlic and butter, cook for 1 minute until garlic is light golden and it smells amazing.
  • Add wine, then turn up heat. Stir around the chicken to dissolve golden bits stuck on the skillet into the wine. Simmer rapidly for 1 1/2 minutes or until alcohol smell evaporates.
  • Remove from heat. Serve chicken with sauce.

1/3 cup butter, melted
1/4 cup reduced-sodium soy sauce
7 garlic cloves, minced
1/2 teaspoon pepper
8 bone-in chicken thighs (about 3 pounds)

Steps:

  • In a large bowl, mix the butter, soy sauce, garlic and pepper. Reserve 1/4 cup soy mixture for basting. Add chicken to remaining soy mixture; turn to coat., Place chicken on a broiler pan, skin side down. Broil 4-6 in. from the heat for 10-15 minutes on each side or until a thermometer reads 170°-175°. Brush occasionally with reserved soy mixture during the last 10 minutes of cooking.

6 bone-in, skin-on chicken thighs
Salt & black pepper
2 tablespoons olive oil
4-6 garlic cloves, minced
1 teaspoon Italian seasoning

Steps:

  • Preheat the oven to 400F.
  • In a medium bowl, whisk the olive oil, garlic, and Italian seasoning to form a paste.
  • Generously season the chicken thighs with salt and black pepper. Place the chicken thighs in a baking dish, skin-side up. With a spoon or basting brush, distribute the garlic mixture over the top of the chicken thighs.
  • Bake for 40 to 45 minutes until the chicken's internal temperature reaches 175F.
  • Remove the chicken thighs from the oven and, using a spoon, drizzle some of the garlic sauce over the chicken and serve.

This easy Keto Garlic Butter Chicken is a delicious midweek dinner! It's juicy, tender and super garlicky, perfect with a serving of Cauliflower Mash.

6 Chicken Thighs (bone in skin on)
½ teaspoon Salt
¼ teaspoon White Pepper (ground)
4 ounces Salted Butter
6 cloves Garlic (crushed)
1 tablespoon Rosemary (chopped)

Steps:

  • Preheat the oven to 190C/375F.
  • Season the chicken thighs with salt and pepper.
  • Place a large nonstick frying pan over high heat. Add 2 teaspoons of butter to the pan and brown the chicken thighs. Place the chicken into a casserole dish and set aside.
  • Reduce the heat to low and add the remaining butter, garlic and rosemary. Cook for 3-5 minutes, until fragrant.
  • Pour the butter over the chicken.
  • Bake for 30-40 minutes, until the chicken is cooked through.
  • Serve the chicken drizzled with a little of the butter and with a side of Cauliflower Mash.

6 skin-on, bone-in chicken thighs
salt and ground black pepper to taste
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 475 degrees F (245 degrees C). Set a wire rack inside a broiler pan or baking pan.
  • Pat chicken thighs dry with paper towels. Lift up skin gently; sprinkle salt, pepper, and garlic powder under the skin. Replace skin. Season skin and underside of the thighs with salt, pepper, and garlic powder. Arrange on the rack.
  • Roast in the preheated oven until golden, about 20 minutes. Reduce oven temperature to 400 degrees F (200 degrees C). Continue roasting until juices run clear, about 30 minutes more. Let rest for 5 minutes before serving.
