CHEF JOHN'S SHRIMP COCKTAIL
Before I knew much about food or dining out, I knew that if they brought shrimp cocktails to the table as an appetizer, we were eating at a 'fancy' restaurant. I'm sure I enjoyed the shrimp, but what I really loved was dipping the crackers in the spicy, horseradish-spiked cocktail sauce.

Steps:
- Stir water, onion, lemon, garlic, tarragon, seafood seasoning, peppercorns, and bay leaf together in a large pot; bring to a simmer and cook until flavors blend, about 15 minutes.
- Whisk ketchup, chili sauce, horseradish, lemon juice, Worcestershire sauce, hot sauce, and salt together in a bowl; refrigerate until chilled, at least 15 minutes.
- Bring poaching liquid to a rapid boil. Cook the shrimp in the boiling liquid until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Transfer shrimp to a bowl of ice water and immerse in ice water until cold; drain. Arrange cold shrimp on a platter and serve with chilled sauce.

- Make the shrimp: Prepare an ice-water bath. Bring a large pot of generously salted water to a boil. Boil shrimp until opaque, 3 to 4 minutes. Drain, and transfer to ice-water bath to cool. Drain, and refrigerate.
- Make the mango-basil sauce: Pulse mangoes, lemon rind and juice, vinegar, salt, and white pepper in a food processor until smooth. Fold in basil. (Sauce can be refrigerated for up to 1 day.)
- Make the tomato-horseradish sauce: Stir together chili sauce, horseradish, and lemon juice. Season with black pepper. (Sauce can be refrigerated for up to 1 week.)
- Make the remoulade: Whisk together mayonnaise, ketchup, and mustard. Stir in celery, parsley, and scallion. Season with black pepper. Serve immediately (or refrigerate for up to 1 day).
- Place shell-on shrimp in a large bowl, or peel shrimp and arrange in small serving dishes. Serve with the 3 sauces on the side.
SAUCE FOR COLD SHRIMP

- In a small saucepan over medium heat combine ketchup, mustard, and vinegar. Add butter, onion, and garlic. Once the butter is melted, add paprika and cayenne pepper. Once it starts to boil, reduce the heat to minimum and let it cook for 3 more minutes. Serve hot or cold with cold (or hot) previously cooked shrimp.
SHRIMP SAUCE

- Heat the oil in a large, heavy pot over medium-high heat. Add the shrimp shells and cook, stirring, until they turn golden brown, about 8 minutes. Lower the heat to medium.
- Add the onion, carrot, celery, thyme and garlic to the pot. Cook, stirring occasionally, until the vegetables begin to soften, about 6 minutes. Add the tomatoes, stock, brandy and wine. Simmer, uncovered, for 1 hour.
- Pass the liquid through a strainer and discard the solids. Pour the liquid into a saucepan and simmer until reduced to 1 1/2 cups. Season with salt to taste. Remove from the heat. Add the butter 1 tablespoon at a time, whisking constantly until all of the butter has been incorporated and the sauce is the consistency of heavy cream. Strain and set aside. Serve with sturgeon and spring vegetables (see above).

LEMON-GARLIC MARINATED SHRIMP (ICE COLD AND REFRESHING)
I found this recipe on the Eating Well website amongst the diabetic friendly recipes. It's supposed to be an appetizer but I served it over a nice salad as a cool, refreshing summer dinner. We loved it. The shrimp are super simple to prepare and they tasted great hot or cold although they are meant to be served cold. Serves 12 as an appy but 6 as a main course.

- Force garlic through a press into a bowl and stir together with remaining ingredients. Chill sauce at least 4 hours and up to 3 days.
- Serve sauce with shrimp and/or crudités.
COLD SHRIMP WITH WARM COCKTAIL SAUCE
Steps:
- Place the shrimp in a saucepan large enough to hold them comfortably. Add enough cold water to cover them. Turn the heat to high, and bring the water to a boil. Cover the saucepan, remove it from the heat and let the shrimp sit for 10 minutes. Drain the shrimp in a colander or through a sieve. Place in a large shallow bowl, and chill completely. (Or if you're in a hurry, you can just run the shrimp under cold running water to cool them off.)
- To make the sauce, combine the ketchup, the vinegar and the butter in a small saucepan. Mix them well.
- Cook the sauce over medium-low heat, stirring occasionally, until the butter is completely melted. (At this point, you can keep the sauce warm for more than an hour, but keep the heat under it as low as possible.) Add horseradish to taste.
- Serve the cold shrimp with the sauce, warm or cold.

- Pat the shrimp dry and season with 1 teaspoon salt. Put the butter and hot sauce in a large bowl.
- Heat the oil in a large (12-inch) cast-iron skillet over high. Add the scallions and cook until softened and browned in spots, 1 to 2 minutes. Transfer the scallions to the bowl with the butter and hot sauce.
- Add the shrimp to the skillet in a single layer and cook, undisturbed, until golden brown, 2 to 3 minutes, adding more oil if the pan is dry. Flip and cook until opaque all the way through, 1 to 2 minutes more.
- Transfer the shrimp and any juices to the butter, hot sauce and scallions. Toss vigorously until the butter is melted and the shrimp is glossy. Taste, and add more hot sauce and salt as needed.
