1 lb. green beans, trimmed
1 1/2 c. bread crumbs
2 tbsp. olive oil
kosher salt
Freshly ground black pepper
1/2 c. flour
2 eggs
2 tbsp. milk
For dip
1/2 c. ranch dressing
1 small cucumber, peeled, seeded, and finely chopped
1 tsp. white vinegar
2 tsp. wasabi powder
Pinch cayenne pepper (optional)

Steps:

  • Preheat oven to 425°. Line a large baking sheet with parchment paper.
  • In a large shallow bowl, combine bread crumbs and olive oil and toss until evenly combined. Season with salt and pepper. In a separate shallow bowl, whisk together eggs and milk.
  • Working in batches, dredge green beans in flour, then dip green beans in eggs and toss in bread crumbs. Transfer to prepared baking sheet and bake until golden and crispy, 20 to 25 minutes.
  • Meanwhile make dip: In a small bowl, whisk together ranch dressing, cucumber, white vinegar, wasabi powder, and cayenne. Mix until well combines.
  • Serve green fries warm with wasabi ranch dip.

These are tasty alternatives to both regular french fries and also a way to get in your veggies! I make them by the truckload and freeze them. My husband hates green beans but gobbles these up! Serve with Ranch dressing or another favorite dipping sauce.

oil for frying
1 pound fresh green beans, trimmed
½ cup water
1 egg
½ cup milk
2 cups seasoned bread crumbs
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup all-purpose flour

Steps:

  • Heat the oil in a deep fryer or electric skillet to 375 degrees F (190 degrees C).
  • Combine the green beans and water in a saucepan. Cover and bring to a boil. Cook until the beans are bright green, about 4 minutes. Drain and transfer to a bowl. Cover with cold water and set aside.
  • In one bowl, whisk the egg and milk together. In a separate bowl, mix together the bread crumbs, chili powder, garlic powder, and onion powder. Drain the green beans and toss with flour to coat, shaking off the excess. Dip the beans into the egg mixture and then into the bread crumbs, coating thoroughly.
  • Fry beans in batches so they are not touching. Cook until golden brown and crispy, about 2 minutes. Drain on paper towels.

2 tablespoons olive oil
1/2 pound green beans, trimmed
1/4 teaspoon kosher salt
Serving suggestions: your favorite dip or lemon wedges

Steps:

  • Heat a large skillet over medium-high heat for 3 minutes. Add the oil and heat another minute.
  • Scatter the beans evenly in the pan and sprinkle with the salt (see Cook's Note). Allow the beans to cook undisturbed until browned, blistered and beginning to split on the first side, about 3 minutes. Using tongs or a slotted spatula, flip the beans and continue to cook another 2 minutes. Flip one more time and cook until all the beans have a good amount of golden brown, an additional minute. Remove to a paper towel-lined plate to drain. Serve with your favorite dip or simply with a squeeze of lemon.
