1 tablespoon kosher salt
2 teaspoons grated lime zest
10 flour tortillas (10 inches)
1/4 cup olive oil
TOPPING:
1 package (8 ounces) cream cheese, softened
2 tablespoons lime juice
2 teaspoons seafood seasoning, divided
2 cans (6 ounces each) lump crabmeat, drained
6 green onions, finely chopped
1/2 cup shredded sharp white cheddar cheese

Steps:

  • In a small bowl, combine salt and lime zest; set aside., Using a 3-inch star-shaped cookie cutter, cut eight star shapes from each tortilla. In a large skillet over medium-high heat, heat half of the oil. Fry tortilla stars, a few at a time, until golden brown on both sides. Add more oil as needed. Drain on paper towels; immediately sprinkle with salt mixture., In a small bowl, beat the cream cheese, lime juice and 1 teaspoon seafood seasoning until blended. Fold in crab and onions. Arrange chips on ungreased baking sheets. Top with crab mixture; sprinkle with cheddar cheese., Broil 3-4 in. from the heat for 1-2 minutes or until cheese is melted. Sprinkle with remaining seafood seasoning. Serve immediately.

1/4 cup freshly squeezed lime juice
2 teaspoons kosher salt
10 fresh corn tortillas, cut into quarters
2 quarts peanut oil

Steps:

  • In a small mixing bowl, combine the lime juice and salt. One at a time, dip the chips into the mixture and arrange on a cooling rack set inside a sheet pan. Allow to dry for 1 hour or until there are no visible signs of moisture on the chips.
  • Place the oil into a 5-quart pot or Dutch oven and heat to 365 to 375 degrees F. Gently lower the chips, 5 to 6 at a time, into the oil and fry for 20 to 30 seconds. Using a slotted spoon or spider, remove the chips to a newspaper-lined sheet pan. Allow to cool 3 to 4 minutes before serving.
  • *If you prefer plain tortilla chips simply stack the fresh tortillas, cut into quarters and fry according to the instructions above. If you are making chips from the Good Eats recipe in this episode, the cooking time will be 1 to 1 1/2 minutes.

My grandfather grew up on the bayous of Louisiana, and seafood platters were frequent at our pre-Thanksgiving table. The night before Thanksgiving, when all the family gathered, we would have shrimp creole. The next day, the 'pre-game' play was a bowl of the leftover shrimp creole and cracked crab. I have incorporated this tradition into my own Thanksgiving feast day; it is a nice light starter, preparing one for the onslaught of heavy foods to come.

2 large egg yolks, at room temperature
2 tablespoons fresh lemon juice (from about 1/2 a lemon)
2 dashes hot sauce (preferably Tabasco)
1 cup extra-virgin olive oil
Kosher salt
2 to 3 cups canola, corn or grapeseed oil, for frying
2 packages shrimp chips (banh phong tom)
1 1/2 pounds picked Dungeness crabmeat, divided
Celery sticks, for serving
Orange slices, for serving

Steps:

  • For the mayonnaise: In a large bowl, add egg yolks, lemon juice and hot sauce. Whisk to combine. Slowly begin adding the oil while whisking constantly, making sure oil is fully incorporating and stopping frequently until each little bit is emulsified into the egg yolk mixture. If it becomes too thick, a little drizzle of water can be added as necessary until all of the oil has been incorporated. When all of the oil has been whisked in, and the mayonnaise is creamy and luscious, season to taste with salt. Set aside.
  • For the shrimp chips: Heat 2 inches of oil in a 6-quart saucepan. Clip in a deep-fry thermometer and heat the oil to 375 degrees F. Fry the shrimp chips until puffy, about 1 minute. Remove and drain on paper towels. Set aside.
  • For the crab and assembly: Place 3/4 of the crab in a mixing bowl and toss with 3 or 4 tablespoons of the homemade mayonnaise. Serve dressed crab alongside the remaining undressed crab with a bowl of the mayonnaise and a pile of shrimp chips on the side. Garnish with celery sticks and orange slices.

2 teaspoons ground dried chipotle pepper
1 lime, juiced
1 large egg white
¼ cup ice water
½ teaspoon kosher salt
¼ cup cornstarch
¼ cup self-rising flour
2 ears fresh sweet white corn, kernels removed from cob
1 cup vegetable oil for frying, or as needed
1 ½ cups flaked fresh Dungeness crab meat
1 fresh lime, cut into wedges

Steps:

  • Whisk mayonnaise, chipotle powder, and lime juice together in a mixing bowl. Cover with plastic wrap and refrigerate until needed for serving.
  • Whisk egg white, ice water, and salt together in a large mixing bowl until mixture is light and foamy, 1 or 2 minutes. Add cornstarch and flour; whisk together until thoroughly mixed. Batter should resemble a thin pancake batter. Stir in corn.
  • Heat 1/2 inch vegetable oil to 350 degrees F (175 degrees C) in a seasoned cast iron skillet. Spoon about 2 large spoonfuls of batter into oil for each fritter. Do not crowd, cook in batches, if necessary. Fry until browned and crispy, about 2 minutes per side. Turn fritters carefully to avoid spattering the oil. Drain on paper-towel-lined plate.

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line 2 baking sheets with baking parchment.
  • Wash kale. Remove and discard ribs. Dry leaves thoroughly, using a salad spinner if available. Make sure no moisture remains. Tear kale leaves into 2- to 3-inch pieces.
  • Blend olive oil, Sriracha hot sauce, lime juice, and salt together with a whisk in a large bowl; add kale and toss to coat.
  • Divide kale onto prepared baking sheets and arrange so there is no overlapping of pieces.
  • Bake in preheated oven for 15 minutes, flip any pieces getting too browned on the bottom, and continue baking until the kale is crisp, about 15 minute more. Let kale chips cool 3 to 4 minutes before serving.

  • Make wonton crisps:
  • Halve each wonton wrapper to make 2 rectangles, then halve each rectangle diagonally to make 2 triangles. Heat 1 1/4 inches vegetable oil in a 4- to 5-quart heavy pot over moderately high heat until thermometer registers 360°F. Gently lay 4 triangles on oil (do not drop in, or triangles will lose their shape) and fry, turning over once, until just golden, 15 to 30 seconds total. 2 medium shallots, quartered
1 lemongrass stalk, bottom third only, tough outer layers removed, cut into a few pieces
1 3-4" piece ginger, peeled, coarsely chopped
1 serrano chile, preferably starting to turn orange, halved, seeds removed if desired
4 medium garlic cloves
2 Tbsp. double-concentrated tomato paste
1 tsp. sugar
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more
1 Tbsp. vegetable oil
4 oz. cream cheese, room temperature
2 Tbsp. mayonnaise
8 oz. claw crabmeat, picked over
3 medium scallions, finely chopped
½ large bunch cilantro, tough stems discarded, leaves and tender stems finely chopped
2 Tbsp. store-bought fried shallots or garlic (optional)
Shrimp chips (such as Dandy's or Shrimp Snacks) or Ritz crackers (for serving)

Steps:

  • Pulse or blend shallots, lemongrass, ginger, chile, garlic, tomato paste, sugar, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ cup water in a food processor or blender until a coarse purée forms.
  • Heat oil in a medium skillet over medium-high. Scrape purée into pan and cook, stirring often, until mixture darkens and thickens to the consistency of tomato paste, 12-15 minutes. If it begins to stick and brown, stir in a little water (about 1 Tbsp.), scraping up any browned bits with a wooden spoon. (You should have about ⅔ cup.)
  • Transfer mixture to a small bowl and vigorously mix in cream cheese and mayonnaise. Stir in crabmeat, half of the scallions, and half of the cilantro. Taste dip and season with more salt if needed.
  • Transfer dip to a serving bowl. Top with remaining scallions and cilantro, then with fried shallots (if using). Serve with shrimp chips.

  • Remove from the oven and cool to room temperature. Sprinkle with the lime zest, sea salt and chile powder to taste.
