GLUTEN FREE CHOCOLATE CRINKLE COOKIES-FOR PASSOVER!
From "A Taste of Tradition" by Tamar Ansh. Haven't tried them yet, but they look good. I did not include the chilling time (a few hours or overnight) in the cooking time.

Steps:
- With a hand blender, mix together the cocoa, oil, and sugar. Beat in eggs, one at a time. Add vanilla.
- Add in potato starch and baking powder, and mix until the batter resembles thick paste.
- Chill batter several hours or overnight covered in fridge. If very liquidy after it's been chilled, you may need to add a bit more potato starch.
- Preheat oven to 350F/ 180C .
- Roll batter into balls, then roll each cookie ball in the powdered sugar until well coated. Space evenly apart on a lined cookie sheet.
- Bake for 10-15 minutes until just starting to crinkle. Let the cookies cool off on the baking sheets for five minutes. Then remove gently with a spatula. They spread out a lot and are delicate to handle.
- Freezes well.

CRISPY PASSOVER COOKIES (GLUTEN-FREE)
I found this really tasty recipe on an online forum. It could not be easier to throw together (dough can be mixed by hand) and tastes much better than the usual Passover cookies. Dough can be frozen and recipe can be halved. Recipe makes 4 dozen small cookies on 2 cookie sheets.

Steps:
- Beat eggs eggs, salt, and vanilla.
- Add sugar, nuts, and coconut, if using. The mixture will be thick.
- Drop onto a greased pan by small spoonfuls. Bake at 350°F for 15 minutes or until golden. Let harden before removing from pan.
PASSOVER APPLE CRISP (NON-GEBROKS, GLUTEN FREE)
A light and sweet dessert is always appreciated at the end of large holiday meals. Potato starch is used in place of flour in this recipe.

- Preheat oven to 350 degrees F (175 degrees C). Spray a large baking dish with cooking spray.
- Combine apples, white sugar, 3 tablespoons potato starch, lemon juice, and 1 teaspoon cinnamon in a bowl. Pour apple mixture into the prepared dish.
- Mix 2 cups potato starch, brown sugar, margarine, and 1 teaspoon cinnamon together in a separate bowl until crumbly but moist. Sprinkle topping over the apple mixture.
- Bake in the preheated oven until golden brown on top, 40 to 50 minutes.
