QUICK & CRISPY HOME FRIES
In order to get a crispy crust like the fries at your local diner you need to precook and cool them. When you pan fry a cold starch, it gets a beautifully crispy surface.

Steps:
- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
- Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
- As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

OVEN BAKED CRISPY POTATO FRIES
I made this side last night from a Rachael Ray recipe. I've tweaked it a little based on my initial experience. It's super fast and easy. Any other ideas on how to tweak more would be great!

Steps:
- Heat oven to 550 degrees (or as high as your oven goes).
- Halve each potato, then cut each half in 5 slices lengthwise. Place on a baking sheet and drizzle the olive oil over them, work the potatoes around in the oil until evenly coated.
- Season with the rosemary, salt, pepper and red pepper. (I recommend LOTS of salt and I'm not big on super salty foods.) Throw the garlic cloves on the sheet with the potatoes.
- Roast 25 minutes. Make sure to turn them all once at the halfway point or they will end up sticking to the baking sheet.

Steps:
- Preheat oven to 425°.
- Peel and cut sweet potatoes into fries no thicker than 1/2″. Soak in water for minimum of one hour, but preferably for half a day.
- Drain water from bowl and lift fries out by the handful. Give them a good shake. They should be dry but still have enough moisture on them to allow the cornstarch to stick.
- Put cornstarch in a plastic bag and drop all of your fries inches Blow a little air into the bag, twist the top and shake it vigorously. Lift the fries out onto one or two baking sheets.
- Coat with Olive Oil. The more the crispier and less sticking you'll have, but the less healthy they'll be. Use 2 pans if you have to. You want to make sure the fries aren't crowded on the pan otherwise they'll steam as opposed to getting crispy.
- Bake for 15 minutes then check. Once bottom of fries are getting crisp, flip them over and cook for another 5-10 minutes.
- (for deep frying follow the first 3 steps, but instead of baking them, put them in the deep fryer at it's highest setting for a few minutes).
- Dipping Sauce:.
- Mix together mayo, pepper and Sriracha sauce. Adjust to your taste.
- Please note : This recipe does have a bit of a learning curve. It may take a few attempts to get your proportions of corn starch and oil correct. If you it doesn't work for you, it's not the recipe it's either a) your technique or b) your baking pan.

- Preheat the oven to 400 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
- Cut each potato in half lengthways, then in half lengthways again to make quarters, and then cut each half in half lengthways on the diagonal to make two wedges (you’ll end up with 8 wedges per potato; make sure they are about the same thickness and size).
- Place the sliced potatoes into a large bowl and cover them with hot water (I used hot water from the tap, but others have suggested that pipes can leach impurities into hot water, so it may be best to use cool tap water that has been heated on the stove). Let them soak for 10 minutes.
- Drain the potatoes and lightly pat them dry with a lint-free tea towel. Place the potato wedges on the prepared pan and drizzle them with the olive oil. Sprinkle the garlic powder, onion powder, salt and a generous amount of pepper on top.

- Preheat the oven to 475˚ F. Place the potato wedges in a large mixing bowl. Cover with hot water; soak for 10-30 minutes. Put 4 tablespoons of the oil onto a heavy, rimmed baking sheet. Tilt the sheet side to side to evenly coat the pan with oil (a pastry brush can also help with this). Sprinkle the pan evenly with the salt and pepper. Set aside.
- Drain the potatoes. Spread the wedges out on layers of paper towels or on clean kitchen towels. Pat dry with additional towels. Wipe out the now empty bowl so it is dry. Return the potatoes to the bowl and toss with the remaining 1 tablespoon of oil. Arrange the potato wedges on the prepared baking sheet in a single layer. Cover tightly with foil and bake for 5 minutes. Remove the foil and continue to bake until the bottoms of the potatoes are spotty golden brown, 15-20 minutes, rotating the baking sheet after 10 minutes. Using a metal spatula and tongs, flip each potato wedge keeping them in a single layer. Continue baking until the fries are golden and crisp, 5-10 minutes. Rotate the pan as needed to ensure even browning.
- When the fries are finished baking, transfer to a paper-towel lined plate to drain some of the grease. Season with additional salt and pepper to taste. Serve warm.

- Wash and peel your sweet potatoes. Cut the potatoes, slice them in half lengthwise with a sharp knife on a cutting board. Then cut each half in half again lengthwise. You will have 4 sections of sweet potato. Cut each section into fries. We want them to be quite small, about 1/4-inch wide.
- Place sweet potato fries into a large bowl, and cover with water. Let them soak for a minimum of 1 hour, or as long as overnight.
- Drain the water out and place the sweet potatoes on a towel on the counter. Pat dry with a towel. You want them to be as dry as possible.
- Place sweet potatoes in a large bowl. Add about 3 tsp of cornstarch, 3/4 tsp of garlic powder, 3/4 tsp paprika, and 1/8 tsp of black pepper. Use a large spoon and mix up the cornstarch and seasonings into the sweet potatoes. The white cornstarch will disappear. Add 3 tbsp of olive oil, and mix it up again.

- Wash and peel your sweet potatoes. Cut into 1/4 inch thick fries and rinse the potatoes for about 10-15 seconds under cold water then dry with paper towels or a clean dish cloth you don't mind turning slightly orange.
- Mix the cornstarch with the water to make a slurry in a large bowl or large ziploc bag, add sweet potatoes and toss to coat.
- Heat your oil in your pot to 350 degrees and add the fries 1 at a time so they don't stick together, but make sure you don't overcrowd your pan.
- Each time you do another round of potatoes toss the potatoes in the slurry again to prevent the cornstarch from settling. This should only take a few seconds and is even easier if you have a ziploc bag you can just flip upside down a few times and shake.
