1/4 lb large fresh scallops, hard muscle removed and quartered
1 1/2 tablespoons ground Thai red chili peppers (or to taste)
salt
1 tablespoon peanut oil
2 -3 tablespoons chile mayonnaise (recipe below)
1 (8 inch) flour tortillas
1/4 cup peanut oil
2 tablespoons scallions, chopped
2 -3 sprigs cilantro
2 teaspoons chili oil
1/4 cup mayonnaise (sweet Japanese variety works best see note)
1 teaspoon sriracha Asian chili sauce (or to taste)

Steps:

  • For The Flatbread: Heat 1/4 cup peanut oil in a large skillet. Submerge tortilla and fry until golden on one side, then turn and fry the other side. Remove from the pan and drain on a paper towel.
  • For The Scallops: Meanwhile, heat 1-tablespoon peanut oil in a small non-stick skillet. Season the scallops with salt then coat with the chili powder. Place the scallops in the hot pan and sear to brown on one side over high heat. Lower the heat slightly and turn the scallops over and repeat until brown. Remove the pan from the heat while you assemble the flatbread.
  • To Assemble: Spread the crisp tortilla with the chile mayonnaise. Distribute the warm scallops over the mayonnaise. Garnish with the scallions, cilantro and chile oil. Cut the flatbread in quarters and serve immediately.
  • To Make The Chile Mayonnaise: Combine the mayonnaise and sriracha well. Keep refrigerated until use.
  • Note: If you can't find the Japanese mayonnaise, add 1 tablespoon of sugar to the sauce.

8 large scallops (fresh or thawed frozen)
salt and pepper
4 tablespoons prepared mayonnaise (e.g. Western Family)
1/2 lime, juice of
1/4 teaspoon ground chili powder

Steps:

  • Mix mayonnaise, lime and chili pepper in small bowl.
  • Pat dry the scallops, salt and pepper to taste, then grill on high for 3 mins a side or until done.
  • In the meantime, grill vegetables (onions, red bell peppers and asparagus stir-fried with olive oil, salt, pepper and Italian seasoning go well).
  • Serve with a dollop of lime mayonnaise on each scallop. Garnish with a light sprinkle of chili powder.

1 lb fresh sea scallop (or thawed frozen)
3 tablespoons yellow cornmeal
1/2 teaspoon salt
1/2 teaspoon paprika
1 tablespoon oil
1/2 cup tartar sauce
2 tablespoons chopped scallions
1 tablespoon orange juice
1 1/2 teaspoons chipotle hot pepper sauce

Steps:

  • Mix chipotle tartar sauce ingredients in a small bowl. let stand while cooking scallops.
  • Gently pat scallops dry between layers of paper towels. put scallops, cornmeal, salt, and paprika in a plastic food bag; shake to coat.
  • Heat oil in large non-stick skillet over medium high heat.
  • Add scallops in one layer and cook 3 minutes, carefully turning once with tongs, until golden on the outside and just opaque at centers.
  • Serve with sauce.

1 1/4 lbs sea scallops, sliced in half horizontally and patted dry
1/2 cup fine dry breadcrumb
2 teaspoons sesame seeds
1/2 teaspoon ground ginger
1 large egg white
1 tablespoon vegetable oil
1 tablespoon toasted sesame oil
1 teaspoon reduced sodium soy sauce
2 tablespoons reduced sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon chopped scallion
1 teaspoon honey

Steps:

  • Preheat oven to 450*F.
  • Lightly oil a wire rack large enough to hold scallops in a single layer over a baking sheet and set aside.
  • In a small bowl, whisk together egg white, vegetable oil, sesame oil and soy sauce until creamy.
  • In a shallow dish, stir together bread crumbs, sesame seeds and ginger.
  • Add the scallops to the egg white mixture, tossing to coat well.
  • Coat each scallop with the bread crumb mixture and place on prepared rack.
