CRISSCROSS SHEPHERD'S PIE

Steps:
- Heat oven to 375ºF.
- Cook potatoes and garlic in boiling water in large saucepan 15 min. or until potatoes are tender.
- Meanwhile, brown meat with onions in large skillet; drain. Return to skillet. Stir in corn, water and soup mix; cook 3 min. or until water is absorbed, stirring frequently. Spoon into 8 ramekins.
- Drain potatoes; return to pan. Add cheddar and cream cheese spread; mash until potatoes are smooth and mixture is well blended. Spoon over meat mixture. Make decorative crisscross or crosshatch pattern by lightly dragging fork over potato layer.
- Bake 15 to 20 min. or until heated through.

- In a saucepan melt the butter. Add the celery, carrots, onion, garlic and season with salt and pepper. Stir to coat vegetables with butter and cover with a buttered round of waxed paper.
- Sweat the vegetables for 5 minutes. Stir in the flour and cook for 2 minutes. Add the gravy, milk, fresh thyme and fresh parsley. Simmer this mixture, stirring occasionally, for 15 minutes.
- Add the roast lamb and cooked peas. Correct seasoning. Spoon mixture into a 1 1/2 quart oval baking dish. Spread 2 cups mashed potatoes on top with a spatula. Deeply score crisscross pattern in potatoes.
- In a small bowl beat together the egg and milk. Brush glaze over potatoes. Put dish in oven. Bake at 350 degrees for 30 minutes, and then put it under the broiler until the potatoes turn golden.

This rich and meaty classic shepherd's pie is made with a mixture of lamb and sirloin and topped with a creamy, cheesy mashed potato topping--it's sure to delight everyone at the table.

Steps:
- Place potatoes in large saucepan and add enough water to cover by 2 inches. Stir in 1 tablespoon salt and place pot over medium-high heat; bring to a boil. Cook until potatoes are fork tender, about 10 minutes. Turn off the heat and drain.
- Return potatoes to the hot pan and set over the same burner. Add milk and 2 tablespoons butter; allow butter to melt from the residual heat. Mash potatoes with a potato masher until smooth. Stir in Cheddar cheese, sour cream, egg yolk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside while you prepare the filling.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
- Heat olive oil and remaining 1 tablespoon butter in a large skillet over medium-high heat. Add onion and carrot and cook, stirring constantly, until onion begins to turn translucent, about 5 minutes.
- Add lamb and beef and cook, crumbling with a spoon and stirring often until browned, about 5 minutes. Sprinkle meat mixture with flour, remaining salt and pepper, rosemary, and thyme. Cook, stirring constantly, for 2 minutes.
- Add beef stock, tomato paste, and Worcestershire; cook, scraping any flavorful bits from the bottom of the skillet. Bring mixture to a simmer. Cook until thickened and vegetables are tender, about 8 minutes. Stir in peas. Transfer mixture to the prepared casserole dish and top with the prepared mashed potatoes.
- Bake in the preheated oven until golden and bubbly around the edges, 25 to 30 minutes. Sprinkle with parsley and serve.

- Make the chili: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and softened, about 6 minutes. - Preheat the oven to 425°F (220˚C).
- Heat the oil in a large pan over medium-high heat until shimmering. Add the ground lamb, season with salt and pepper, and fry for 5 minutes, until cooked through.
- Add the onion, carrots, garlic, thyme, and rosemary, stir, and cook for about 10 minutes, or until the veggies are softened and the meat is well-browned.
- Add the tomato paste and Worcestershire sauce and stir to incorporate. Cook for 1-2 minutes, stirring constantly, until the liquid evaporates and the meat is aromatic.

Steps:
- In a nonstick pan, melt 1 tbsp of the butter and cook the garlic and onion for 2 minutes.
- Add the mushrooms and celery and cook until tender.
- Mix with the hamburger.
- Add the salt and pepper.
- Mix the mushroom soup, milk and soya sauce.
- Mix the rice with the green onions, carrots and 1/4 to 1/3 of the mushroom soup mixture.
- In a buttered casserole dish, spread half the rice mixture, then the meat mixture, followed by the remaining mushroom soup mixture.
- Top with the remaining rice mixture.
- Dot with 2 tbsp of butter, sprinkle with salt and pepper if desired.
- Bake at 350 F for 20 minutes.
- Cover with sour cream and sprinkle with paprika.
- Return to oven for 10 minutes.
- Serve hot.
