Blue Mill Tavern-Style Loosemeat Sliders (Like Maid-Rites Sorta) image

1 lb. quality lean ground beef
1 Tbl. Minerva Dairy Amish Butter
1 tsp. salt, to lightly cover the bottom of your cast iron pan
1/2 of a small to medium-sized onion, chopped fine
1 Tbl. white sugar
1 Tbl. plain yellow table mustard (such as French's)
1 Tbl. regular distilled white vinegar
water, to cover meat
salt and pepper, to taste, (about an 1/8 - 1/4 tsp. each)

Steps:

  • In cast iron skillet, sprinkle salt evenly across the bottom add the butter. Melt over medium heat, then crumble in your ground beef. Start sautéing ,break up ground beef by pressing it and chopping it with the back of a wooden spoon constantly! *The meat must end up being cooked into very fine crumbles. Add chopped onion when meat is mostly done and very finely broken up. Keep working it until the meat is fully cooked. When meat is browned, drain off any fat by tilting the pan, and scooping out the grease using a large spoon. Add and stir in mustard, vinegar, sugar, and just enough water to barely cover the meat in the pan. Bring to a boil, lower heat to a simmer, and cook until the water is completely cooked out, about 30 - 40 minutes. (Longer depending on how much water you added.) But more water, and a longer cooking time, is best. Taste, and adjust salt and pepper to taste. Turn off the burner. Steam your hamburger buns by placing them outside-down onto a wire splatter screen placed over the hot skillet, or in the microwave with a glass of hot water. When buns are warmed, use an ice cream scoop to pile a heaping mound of the meat onto the bottom buns. You can serve them as is, or add finely chopped onions, or melt some cheese placed onto the hot meat, or do as I enjoy, and add mustard, onions, and sliced dill or bread 'n butter pickles!

1 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing the grill grates
3 slices Cheddar, cut into quarters
12 Hawaiian sweet rolls, such as King's Hawaiian, split
2 tablespoons ketchup
2 tablespoons mayonnaise
1 tablespoon yellow mustard
12 small pieces romaine or iceberg lettuce (about the same size as the rolls)
12 dill or bread-and-butter pickle chips

Steps:

  • Prepare a grill or grill pan for medium-high heat.
  • Divide the ground beef into 12 portions (about 2 ounces each). Pat each into a 1/2-inch-thick patty and make an indentation in the center with your thumb so the patties keep their shape while cooking. Sprinkle with salt and a few grinds of pepper.
  • Brush the grill grates or grill pan with oil. Grill the patties, turning once, until nicely browned but still a bit pink inside, 2 to 3 minutes per side. Top each patty with a piece of cheese and grill until melted, about 1 minute.
  • Arrange the sweet rolls cut-side up on a cutting board or large serving platter. Spread some ketchup, mayonnaise and mustard on each roll bottom. Top with a piece of lettuce and a burger patty. Put a pickle on each patty and sandwich with the remaining roll tops.

Steps:

  • Crumble the ground beef and onion into a large skillet over medium-high heat. Cook, stirring to break up lumps, until no longer pink. Drain off the grease and return to the stove. Add the Worcestershire sauce, beef broth, salt, pepper, and butter. Bring to a boil, then set the heat to low and simmer uncovered until the liquid is almost completely gone, about 40 minutes. Remove from the heat, cover, and let rest for 15 minutes before serving on buns.

2 lb ground beef
1 teaspoon salt
2 teaspoons pepper
2 teaspoons garlic powder
½ white onion, diced
6 slices cheddar cheese
12 dinner rolls, or hawaiian sweet rolls
2 tablespoons butter, melted
1 tablespoon sesame seeds

Steps:

  • Preheat the oven to 350°F (175°C).
  • Combine the beef, salt, pepper, and garlic powder in a 9x13-inch (23x33-cm) rimmed baking dish, mixing thoroughly, then pressing into a flat, even layer. Bake for 20 minutes. Drain the liquid and set the cooked beef aside.
  • Slice the rolls in half lengthwise. Place the bottom half in the same baking dish. Place the cooked beef on the rolls, followed by the onions and cheese. Top with the remaining rolls.
  • Brush the tops of the rolls with melted butter and sprinkle the sesame seeds on top. Bake for 20 minutes, or until the bread is golden brown and the cheese is melted.
  • Slice into individual sliders, then serve.
