CROATIAN CEVAPI
My Croatian husband loves cevapi, so I tried making some for him and he loved them. I made it with beef and veal, which I know is not traditional, but it was so delicious! This recipe has become a staple in our house!

Steps:
- Line a baking sheet with parchment paper.
- Combine beef, veal, bread crumbs, onion, egg, soda water, seasoning blend, garlic, baking soda, paprika, red pepper flakes, salt, and pepper in a large bowl. Mix well. Shape into small sausages and place on the prepared baking sheet.
- Preheat an outdoor grill for high heat and lightly oil the grate. Grill sausages until browned, about 5 minutes per side.

CROATIAN AUTUMN BEEF STEAKS
This is a typical stuffed steak from Croatian Northern area (Podravina). As many Croatian recipes it is also rich with tastes, ingredients, and we don't care much for cholesterol. With a glass of red wine, this meal will satisfy all your friends, and of course your mother in law.

Steps:
- For the filling: slice the onion very finely, liver not so finely, bacon on small cubes, and mushrooms on "leaves".
- Sauté it following this order: First onion, than mushrooms, and liver and bacon together as last (put the new ingredient when the last is soft, and so on).
- Sauté it until all liquid evaporates.
- Season it with salt and pepper.
- When it cools add one yolk, parsley leaves (minced) and nutmeg powder.
- Spread the filling over each steak, fold them in half and close it with toothpicks (3-4 per each steak).
- Cover the steaks with flour and fry them on both sides until they become brownish.
- Pour 2 cups of wine over steaks and cook until alcohol evaporates.
- Add beef stock to cover the steaks completely.
- Add tomato jam and cook for 20-30 minute or meat become soft.
- Five minutes before end, add mustard. Try it, and season it if necessary.
- Serve with rice or potato.

CARIBBEAN BEEF LOIN STEAKS
These steaks are flavored with a Caribbean-style marinade.

- Whisk together the rum, salt, pepper, cinnamon, powder, oregano, sage, vinegar, and lemon juice in a bowl; pour into a gallon-sized, resealable plastic bag. Add the onion and steaks to the marinade. Seal the bag, squeezing out as much air as possible. Allow to marinate in refrigerator 2 1/2 hours.
- Heat the olive oil in a large skillet over medium heat. Cook the steaks with the skillet covered to desired doneness, about 3 minutes per side for medium rare.

NORTH CROATIAN MUSHROOM PANCAKES (CREPES)
This is typical Northern Croatian supper. It is possible to mix mushrooms, especially with wild mushrooms. I did not give pancake recipe, everyone knows how to make them, and these pancakes are ordinary, simple THIN pancakes. This is the recipe using 12 to 15 pancakes.

Steps:
- Melt butter in a pot and sauté finely sliced onion until soft.
- Add sliced mushrooms and sauté it in half closed pot. Season with pepper, salt, nutmeg and very finely minced garlic.
- Add meat stock and cook until stock evaporates.
- Put mushrooms aside to cool a bit.
- Add mixed 200g sour cream, parsley leaves and yolk into mushrooms.
- Stuff pancakes and form them into cigars.
- Put pancakes into buttered casserole pot only one layer. Cover with rest of sour cream and bake it on 200°C about 35 minutes. Serve hot.
