TRADITION:ROASTED LAMB UNDER THE BELL
This is a true gourmet meal: roasted lamb with potatoes and vegetables. It is among the most popular meat dishes to tray in Croatia. Fresh young meat and Mediterranean herbs give this dish ancient flavour of distinguished beauty.

- The preparation of this rustic meal is actually quite simple: you put everything together in the baking pan (which is part of the bell) and season with rosemary leaves, sea salt and oil. Just cut potatoes, tomatoes, onion and apple in half.
- Cook the way it is described in the text above for 1,5 to 2 hours. You can uncover it after about 45 minutes and turn the meat on the other side. Cover with bell and hot coals and continue baking. The meat should be nice and golden, the potatoes crispy and vegetables soft.

- Preheat oven to 350°F. Arrange potatoes in a single layer on bottom of 12-inch 8-quart Dutch oven. Top potatoes with onions, garlic, and carrots. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Remove rosemary leaves from sprigs and scatter over vegetables. Drizzle with 3 tablespoons olive oil.
- Light 2 charcoal chimney starters filled halfway with briquettes. When briquettes are covered with gray ash, pour 1 chimney starter’s briquettes onto the bottom of a charcoal grill. Place bottom grate on top of charcoal.
- About 1 hour before cooking, build a hardwood campfire in a fire pit and let it burn down to red-hot coals, which then turn into smaller, ash-covered glowing embers. At this point you are ready for cooking.
