Golden Sausages image

A simple sausage casserole that kids love. Sort of sweet & sour flavours. I sometimes add pineapple pieces and use the juice from the tin for making up the sauce. I learnt this recipe in a cooking class in Polytech, back in 1987 and it's been a favourite ever since.

Number Of Ingredients 8

8 sausages (I usually use chicken sausages)
1 -2 onion (chopped)
2 tablespoons flour
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
2 tablespoons tomato sauce
1 cup boiling water

Steps:

  • Boil the sausages for 10 minutes. Cool and remove the skins. Slice and then place into a casserole dish. Sprinkle chopped onion over the sausages and mix inches.
  • Mix dry ingredients together in a bowl, add the sauces and stir into a thick paste. Add the boiling water and mix until lump-free. Pour the sauce over the sausages and onion.
  • Bake for 20 minutes in a preheated over at 180 deg C or 350 deg F.
  • Great served with mashed potatoe and veges of your choice.

I have no idea where they got it from, it's scribbled in Gran's writing in my Mothers' cookbook :) We love it and it's a favourite weekend "easy meal".This recipe was a huge childhood favourite of mine, I adored it to bits, as did my cousins... now that I have made it as an adult again I see that my tastes must have changed.. and a perfect example of how your memory can play tricks on you... this a relatively bland recipe, far more than I remember... so now the light dawns why my Gran made it so often, My grandfather was the King of Bland and hated anything too spiced up... so if you are cooking for people like my Granddad and for kids, this recipe will hit the spot :)

1 lb sausage
2 onions
2 carrots
2 cooking apples
2 tablespoons flour
1 tablespoon sugar
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
1 tablespoon tomato sauce
2 1/2 cups boiling water

Steps:

  • Boil sausages and cut into thirds.
  • Grate the apple, onion and carrots.
  • Mix the flour, sugar, vinegar, Worcestershire sauce and tomato sauce into a paste.
  • Add the boiling water to paste and mix well.
  • Add paste mixture to sausages and apple, onion and carrots.
  • Cook at 180°C / 360°F in oven for 1 1/2 hours.

My great grandmother frequently served this super quick and simple dish. I often omit the onions for my family and use vegetarian sausage links for my portion.

8 links pork sausage
1 onion, chopped
1 (10.75 ounce) can condensed tomato soup
1 ½ cups mashed potatoes

Steps:

  • Set a deep skillet over medium heat and coat with cooking spray. Add sausages and cook until browned. Remove from the pan and set aside. Add the onion to the skillet; cook and stir until tender. Pour in the tomato soup and bring to a simmer. Return the sausages to the skillet and simmer in the soup for about 30 minutes. Serve over mashed potatoes.
