NORTH CROATIAN PORK CHOPS IN MUSHROOM SAUCE



North Croatian Pork Chops in Mushroom Sauce image

This is very heavy winter meal. It is advisable to mix various mushrooms because taste is much better. Use dried mushrooms but avoid pickled ones. I've prepared this meal this weekend and everyone loved it.

700 g pork chops
200 g mushrooms (white cultivated)
200 g wild mushrooms
150 g flour
40 g butter
2 tablespoons oil
1/2 liter beef stock
1/3 liter wine (white dry)
1/2 teaspoon thyme (dry)
1 tablespoon pepper (green, whole and grounded)
Worcestershire sauce
10 g salt
1/2 teaspoon pepper (black, grounded)
1 teaspoon mustard (German, estragon)
150 g sour cream
100 g fresh parsley leaves (minced)

Steps:

  • Flat pork chops a bit, pour few drops of Worcestershire sauce on each side and spread out it. Season with salt and pepper, put them on a plate and pour oil over pork chops. Make sure that pork chops are covered with olive oil. Leave them to soak in oil for 60 minutes.
  • Cut white mushrooms into leaves, and wild mushrooms into small pieces (if you have dried mushrooms soak them in cold water for 20 minutes and than cut them into small pieces).
  • Take a frying pan (preferably Teflon, so you don't have to add more oil), heat it. Cover each chop with flour and than fry it until brownish.
  • When finished, put pork chops aside into warm place, add butter and all mushrooms. Season with salt, green pepper and thyme and sauté until mushrooms are soft.
  • Put back pork chops, add wine and cook on medium fire for 20 minutes. When you see liquid evaporates add beef stock. Cook for 30 more minutes.
  • Before end, remove pork chops aside, add mustard and mix well. Cook for 1 minute, add sour cream and mix again. Put back pork chops, cover with sauce and add parsley leaves. Now it is ready to serve. I would recommend rice or mashed potato to serve with this meal.

This is very simple meal. It is similar to some other Croatian recipes (like Samobor pork chops) with difference: you can do it just in a frying pan. The sauce has not very garlic taste and should not have.

150 g pork chops
2 tablespoons olive oil
5 g salt
3 g pepper (black, grounded)
2 garlic cloves
1 teaspoon flour
1/4 cup water
3 g fresh parsley leaves (finely minced)

Steps:

  • Hit the pork chop with a bat to make it thinner. Season it with salt and pepper. Pour over pork chop olive oil and add sliced garlic. Leave it in refrigerator at least 45 minutes.
  • Heat the frying pan (preferably Teflon one) and then put pork chop inches Fry until one side is done, than turn to the other side.
  • When done remove pork chop to a plate and add into pan garlic, some olive oil and flour. Fry for 30 seconds and add some water and parsley leaves. When you get creamy sauce it is done.
  • Pour sauce over pork chops and serve. The sauce must not be too thick, so experience will tell you exactly the proper measures.

This meal is from Zagreb suburb Samobor. Long time ago, Samobor was part of Napoleon's "Iliric County" (Zagreb was in Habsburg monarchy) and after that Samobor is well known for its mustard and sausages (French recipes). This recipe is not from Napoleon time. As usual, everyone in Croatia thinks they know the best way of cooking Samobor pork chops, and this is how I make it.

Number Of Ingredients 10

1500 g pork chops (separate)
10 g flour
35 g garlic
2 teaspoons red paprika (dried)
5 cups beef stock
1800 g potatoes
15 g lard
40 g fresh parsley leaves
5 g pepper
35 g salt

Steps:

  • First rind potato and cut in 1/8 parts. Put them in large pot (the best is clay pot for baking bread) cover with some lard and salt, and bake it for 30 minutes in the oven.
  • During this season pork chops. Fry each pork chop in frying pan on lard. Take them out and remove to warm place.
  • Mince garlic and add it into frying pan on dripping fat. Fry garlic just 10 seconds and add just little flour (one or two teaspoons) and some stock. Sauté it 1 minute and add beef stock (not all, depends how soupy you want your sauce).
  • Put back pork chops, mix it with sauce and add beef stock if necessary. Sauté meat until potato is ready (soft); it should be ready now.
  • Put meat into potato pot and cover with sauce, sprinkle with parsley and put it in oven for just 5 minutes to bake on strong top heat.
  • When serve, it is nice to bring the whole pot to the table, your guests will be satisfied with the view.
