SWEET NOODLE KUGEL WITH MARMALADE AND PRESERVES

Steps:
- Cook noodles in salted water until tender; drain.
- Put butter in bottom of baking dish.
- Mix noodles with the preserves, marmalade, juice, eggs, sour cream, and raisins.
- Pour into buttered pan and bake at 375 degrees F. for about 1 hour, until well browned.
- Sprinkle with cinnamon and sugar when taken from the oven.

NOODLE KUGEL
Somewhat sweet and a bit savory, kugels can be served as side dish or a breakfast treat.

Steps:
- Preheat oven to 350 degrees. Butter a 13-by-9-inch baking dish; set aside. Bring a large pot of salted water to a boil. Add noodles; cook until al dente according to package instructions, about 6 minutes. Drain noodles; return to pot. Set aside.
- Put eggs and sour cream into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until combined. Mix in 3/4 cup sugar, 3/4 cup butter, and the cream cheese. Set aside.
- Heat 2 tablespoons butter in a large skillet over medium heat. Stir in 2 tablespoons sugar, the cinnamon, and nutmeg. Add apples; gently toss to coat. Cook, tossing occasionally, until soft and caramelized, 10 to 12 minutes. Stir apples into egg mixture; pour over noodles. Toss gently to combine. Pour into prepared dish. Drizzle remaining 2 tablespoons butter over noodles; sprinkle with remaining 2 tablespoons sugar.
- Bake until set and top is golden brown, about 30 minutes. Transfer to a wire rack; let stand 15 minutes before serving.
NOODLE KUGEL WITH ORANGE MARMALADE
After reading a lot of different recipes, I "stole" what I liked from each one and came up with this. I'm not a kugel expert, but this recipe has worked for me on several occasions. The marmalade was used simply because I happened to have a jar of it handy, and it went well with the cinnamon. If you aren't as sugar-crazy as I am, by all means eliminate or reduce the amount of sugar (or, use unsweetened marmalade). This is a great dessert or side-dish for a crowd of people! :)

Steps:
- Preheat oven to 350*.
- Bring a pot of water to boil, then add the egg noodles.
- Allow them to boil for about 5 minutes, or until*just* al-dente.
- (Noodles will continue cooking while in the oven.) Drain noodles.
- Return noodles to (now empty) pot.
- Add marmalade to noodles.
- (The hot noodles should melt the marmalade& make it easy to mix)-- Mix well.
- Whisk sour cream, eggs, cottage cheese, cinnamon, and sugar together in a bowl.
- When mixture is smooth, add fruit and stir.
- Pour egg mixture over noodles.
- Mix well.
- Spray a 9 x 12 casserole dish with cooking spray.
- Pour kugel mixture into casserole.
- Mix topping ingredients together, and sprinkle over kugel.
- Bake at 350* for 1 hour, or until the top has become crispy.

SWEET NOODLE KUGEL
This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- Mix cottage cheese, sour cream, sugar, raisins, eggs, salt, cinnamon, and nutmeg together in a large bowl. Mix in cooked noodles. Pour into the prepared baking dish.
- Bake, uncovered, in the preheated oven, until golden brown on top, about 40 minutes.

SWEET KUGEL
Kugel, a traditional Jewish noodle custard dish, is a mainstay of Jewish holiday meals. Defined as a baked pudding or casserole (usually from noodles or potatoes) this one is my own version of kugel, which is adapted from a few recipes to make one that we really love. This is a rich and sweet kugel although they also come in a savory version.

- Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and set aside.
- While noodles are cooking, mix sour cream, cheese, sugar, and butter together in a large bowl. Add eggs, apple, and raisins. Add drained egg noodles and cinnamon; stir until well combined. Pour into the prepared pan.
- Bake in the preheated oven until slightly golden brown and custard has set, about 1 hour. Cool for 10 to 15 minutes before serving.

- Cook noodles according to package directions; drain. Toss with butter and apple; set aside. Meanwhile, beat the sour cream, cream cheese, sugar, eggs, egg whites, 1 teaspoon cinnamon and vanilla until well blended. Beat in milk. Stir in noodle mixture., In a 13x9-in. baking dish coated with cooking spray, layer half of the noodle mixture, all of the preserves and the remaining noodle mixture. Sprinkle with remaining cinnamon. Bake, uncovered, at 350° until a thermometer reads 160°, 55-65 minutes. , Let stand for 10 minutes before cutting. Serve warm or cold.
