Donna Thomas from Dallas has won over 200 ribbons for foods she's entered at the Texas State Fair. Among them is this savory corn bread, stuffed with sausage and ham, that took the blue ribbon in the Cornbread Cookoff. "It's practically a meal in itself!" notes Donna.

Number Of Ingredients 11

1/2 cup chopped green pepper
1/2 cup chopped green onions
3 tablespoons butter
1-1/4 cups all-purpose flour
1 cup yellow cornmeal
1-1/2 teaspoons baking soda
1/2 teaspoon salt
2 eggs, beaten
2 cups buttermilk
1 cup diced fully cooked ham
1/3 pound bulk pork sausage, cooked and drained

Steps:

  • In a large skillet, saute green pepper and onions in butter until tender. In a bowl, combine the flour, cornmeal, baking soda and salt. In another bowl, combine eggs and buttermilk; stir into dry ingredients just until moistened. Fold in the ham, sausage and green pepper mixture. , Transfer to a greased 10-in. ovenproof skillet or 9-in. square baking pan. Bake at 425° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Serve warm. Refrigerate leftovers.

1 ½ cups cornmeal
2 ½ cups milk
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
⅔ cup white sugar
2 eggs
½ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan.
  • Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.

Black folks homemade cornbread does not use a box mix. Instead, cornmeal is used to make this Southern skillet cornbread recipe from scratch.

1 cup cornmeal (medium grind )
⅔ cup all-purpose flour
2 teaspoons baking powder
4 tablespoons butter (unsalted)
1 cup heavy whipping cream
1 tablespoon sugar (granulated )
⅔ cup cream cheese (whipped )

Steps:

  • Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 5 minutes (although you may not use all of this time for melting the butter).
  • Place the butter in an 8-inch baking pan or skillet and melt in the oven for approximately 5 minutes.
  • While the butter is melting, combine the dry ingredients (cornmeal, flour, baking powder, sugar) with the cream cheese and heavy cream in a medium-size mixing bowl.
  • Pour the melted butter from the baking pan into the mixing bowl and mix all the ingredients together.
  • Pour the cornbread batter into the baking pan or skillet.
  • Bake at 350 degrees F. In the conventional oven, bake for 20-25 minutes. In the Instant Pot Omni Plus oven, bake for 18-20 minutes.

1 (16 ounce) package uncooked linguini pasta
1 cup soy sauce
½ cup extra virgin olive oil
½ cup white sugar
⅓ cup distilled white vinegar
1 tablespoon sesame seeds
1 (10 ounce) package mixed baby salad greens
1 (8 ounce) package imitation crabmeat, flaked
1 bunch chopped cilantro
1 avocado - peeled, pitted and diced

Steps:

  • Bring a large pot of lightly salted water to a boil. Place linguini pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • In a bowl, whisk together the soy sauce, olive oil, sugar, vinegar, and sesame seeds.
  • In a large bowl, toss the cooked pasta with the soy sauce dressing, greens, imitation crabmeat, cilantro, and avocado. Chill until serving.

IN FIRST BOWL, COMBINE:
1/2 cup(s) corn meal
1/2 cup(s) rye flour
1/2 cup(s) unbleached wheat flour
1 teaspoon(s) italian seasoning
1 tablespoon(s) onion flakes
2 teaspoon(s) rumford (aluminum-free) baking powder
IN SECOND BOWL, COMBINE:
1 cup(s) hot distilled water
1 1/2 tablespoon(s) organic, unfiltered honey
1 tablespoon(s) organic, raw, unfiltered apple cider vinegar (with the mother)
1/2 teaspoon(s) celtic or himalayan salt

Steps:

  • Pre-heat oven to 350 degrees. Line a muffin tin or 8-inch skillet with liquid lecithin. Mix wet ingredients well until honey is dissolved. Add dry ingredients and quickly stir to mix well. Pour mixed ingredients into the muffin tins or skillet. Bake approx. 20 minutes. Let cool for 5 to 10 minutes, and serve.
